A little effortPreparation time: 20 minutes plus 20 minutes rising timeCooking time: 20 minutes6 - 8 slicesIngredients: Dough: 2 teaspoons dried yeast1 cup polenta3 cups strong flour2 tablespoons olive oil (vegetable oil will do)2 teaspoons sugar1 teaspoon salt1 - 1¼ cup tepid waterTopping: 1 quantity Tomato Sauce Recipe1 red bell pepper, diced1 green bell pepper, diced8oz / 250g button mushrooms, diced1 cup spinach, finely chopped1½ - 2 cups strong cheese, such as Mature CheddarMethod: - Mix the yeast with the sugar and water. Allow to prove (about 5 minutes).
- Place the flour on a work surface. Make a well in the center.
- Pour the yeast mixture, the salt and the oil into the well.
- Gradually mix the wet mixture into the flour. Once it is all incorporated, start kneading the mixture. Add a little more flour or water depending on whether your mixture is too dry or wet.
- Knead the dough for about five minutes until it is quite elastic and pliable.
- Place the dough in a large oiled basin. Cover with cling-film or a cloth. Allow to rise for about 20 minutes.
- Preheat the oven to its hottest setting - around 475° F / 240° C.
- When the dough is well risen, place it on a floured board. Roll it out so that it is very thin. You can either make one large round pizza or a rectangular one that fits a baking tin. Alternatively, you can make smaller individual pizzas. Transfer the base to a greased baking tray.
- Spread the Tomato Sauce Recipe over the pizza base.
- Scatter the topping ingredients over the pizza in layers: spinach, red and green bell peppers, mushrooms and finally the cheese.
- Place the pizza on the top shelf of the oven and bake for about 20 minutes, until the cheese has melted and the base is crisp. There you have it - a healthy veggie pizza recipe!
