Veggie Pizza Recipe

with thin pizza crust recipe

This Veggie Pizza Recipe is made with a thin pizza crust recipe. The use of polenta along with the flour adds to the crispness of the crust. This pizza dough is easily made in a breadmaker on the "Dough" program. Alternatively, follow the instructions below.

This is a relatively healthy pizza recipe and rings the changes.

You may use commercial pizza sauce or make Tomato Sauce Recipe which is well worth the effort.

  • A little effort
  • Preparation time: 20 minutes plus 20 minutes rising time
  • Cooking time: 20 minutes
  • 6 - 8 slices
  • Ingredients:

    Dough:

  • 2 teaspoons dried yeast
  • 1 cup polenta
  • 3 cups strong flour
  • 2 tablespoons olive oil (vegetable oil will do)
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 - 1¼ cup tepid water
  • Topping:

  • 1 quantity Tomato Sauce Recipe
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 8oz / 250g button mushrooms, diced
  • 1 cup spinach, finely chopped
  • 1½ - 2 cups strong cheese, such as Mature Cheddar
  • Method:

    1. Mix the yeast with the sugar and water. Allow to prove (about 5 minutes).
    2. Place the flour on a work surface. Make a well in the center.
    3. Pour the yeast mixture, the salt and the oil into the well.
    4. Gradually mix the wet mixture into the flour. Once it is all incorporated, start kneading the mixture. Add a little more flour or water depending on whether your mixture is too dry or wet.
    5. Knead the dough for about five minutes until it is quite elastic and pliable.
    6. Place the dough in a large oiled basin. Cover with cling-film or a cloth. Allow to rise for about 20 minutes.
    7. Preheat the oven to its hottest setting - around 475° F / 240° C.
    8. When the dough is well risen, place on a floured board. Roll out so that it is very thin. You can either make one large round pizza or a rectangular one that fits a baking tin. Alternatively, you can make smaller individual pizzas. Transfer the base to a greased baking tray.
    9. Spread the Tomato Sauce Recipe over the pizza base.
    10. Scatter the topping ingredients over the pizza in layers: spinach, red and green bell peppers, mushrooms and finally the cheese.
    11. Place the pizza on the top shelf of the oven and bake for about 20 minutes, until the cheese has melted and the base is crisp. There you have it - a healthy veggie pizza recipe!
