Tzatziki Sauce

This Tzatziki Sauce is an excellent accompaniment for simple dishes, such as Fish Cakes, or grilled chicken. If I have fresh herbs at hand, I sometimes omit the cucumber and substitute with a handful of fresh coriander or mint instead - this rings the changes and spruces up an ordinary meal.

  • Easy
  • Preparation time: 5 minutes
  • Makes about 2½ cups
  • Ingredients:

  • 2 cups plain yoghurt - you can use thick Greek yoghurt or the runnier yoghurt - it depends on how thick you want your sauce to be
  • ½ long thin cucumber
  • 1 clove garlic, crushed
  • salt to season
  • Method:

    1. Peel the cucumber and remove the seeds. If you leave the seeds, the sauce tends to get rather watery. Dice the cucumber finely.
    2. Mix the remaining ingredients and season with salt. Serve alongside fish or chicken, or with crusty bread. This is also ideal as a vegetable dip. Simple!
