Tzatziki Sauce
This Tzatziki Sauce is an excellent accompaniment for simple dishes, such as Salmon Patties or grilled chicken. | If there are fresh herbs at hand, I sometimes omit the cucumber and substitute with a handful of fresh coriander or mint instead. The resultant yogurt dip recipe rings the changes and spruces up an ordinary meal. Serve this with carrot and celery sticks as one of those healthy snacks for kids who are peckish. Alternatively, use fat-free yogurt and serve with grilled chicken as one of your heart healthy recipes. |
EasyPreparation time: 5 minutesMakes about 2½ cupsIngredients: 2 cups full-fat or fat-free yogurt - you can use thick Greek yogurt or the runnier yogurt - it depends on how thick you want your sauce to be.½ long thin cucumber1 clove garlic, crushedsalt to seasonMethod: - Peel the cucumber and remove the seeds. If you leave the seeds, the sauce tends to get rather watery. Dice the cucumber finely.
- Mix the remaining ingredients and season with salt. Serve alongside fish or chicken, or with crusty bread. This is also ideal as a vegetable dip. Simple!
