Twice Baked Potato Recipe

If you want to know how to bake a potato, this Twice Baked Potato Recipe is perfect!

You can ring the changes with this baked potato recipe - add crispy bacon or spring onions, or omit the cheese. This is one of those perfect Thanksgiving side dish recipes as it can be make in advance and heated at the last minute. Oven baked potatoes can also become a light main meal in themselves, served with a large salad. Have fun and experiment.


  • Easy
  • Preparation time: 10 minutes
  • Cooking time: 45 - 60 minutes plus 10 minutes
  • Serves: 6
  • Ingredients:

  • 6 large potatoes
  • a little oil
  • 1 tablespoon butter
  • ½ cup milk
  • ½ cup Cheddar cheese
  • salt and pepper to season
  • ½ cup crisp bacon chips (optional)
  • Method:

    1. Heat the oven to 350° F / 180° C.
    2. Wash and dry the potatoes. Rub them all over with oil. Place on a baking sheet and bake for 45 - 60 minutes. They are ready when the skins are just slightly crisp and a skewer pierced into the middle indicates that the flesh is soft.
    3. Slice the potatoes in half, lengthways (hold the potatoes with a cloth to avoid burning your fingers!)
    4. Scoop the flesh into a bowl, leaving about eighth inch (quarter centimeter) around the lining of the potato shell.
    5. Add the butter to the flesh and mash the potato. Gradually add the milk. Season with salt and pepper.
    6. Heap the mashed potato back into the potato shells. Top with cheese and (optional) bacon chips.
    7. Place the potatoes on a baking tray. Place under the grill and cook until the cheese has melted - about 5 - 10 minutes depending on the heat of your grill.
    8. Serve this baked potato recipe as a light meal with a salad or as an accompaniment to a special meal.
