Twice Baked Potato Recipe
This Twice Baked Potato Recipe is a versatile accompaniment to chicken, fish or meat and is utterly delicious.
EasyPreparation time: 10 minutesCooking time: 45 - 60 minutes plus 10 minutesServes: 6Ingredients: 6 large potatoesa little oil1 tablespoon butter½ cup milk½ cup Cheddar cheesesalt and pepper to season½ cup crisp bacon chips (optional)Method: - Heat the oven to 350° F / 180° C.
- Wash and dry the potatoes. Rub them all over with oil. Place on a baking sheet and bake for 45 - 60 minutes. They are ready when the skins are just slightly crisp and a skewer pierced into the middle indicates that the flesh is soft.
- Slice the potatoes in half, lengthways (hold the potatoes with a cloth to avoid burning your fingers!)
- Scoop the flesh into a bowl, leaving about eighth inch (quarter centimeter) around the lining of the potato shell.
- Add the butter to the flesh and mash the potato. Gradually add the milk. Season with salt and pepper.
- Heap the mashed potato back into the potato shells. Top with cheese and (option) bacon chips.
- Place the potatoes on a baking tray. Place under the grill and cook until the cheese has melted - about 5 - 10 minutes depending on the heat of your grill.
- Serve this baked potato recipe as a light meal with a salad or as an accompaniment to a special meal.
