Turkey a la King
Turkey a la King is a quick, easy dinner recipe which can be whipped up with minimal fuss. Chicken a la King is an old-fashioned dish, and this Turkey a la King is a wonderful adaption. It makes good use of leftover Thanksgiving Turkey, whilst ensuring a nutritious family meal. Use between 1lb 5oz - 1lb 12oz / 600g - 800g cooked turkey. There are many stories as to the origin of Chicken a la King, but all concur that it was first created either in the late 19th or early 20th century. It seems to have gone out of fashion which is a pity because it is both quick to prepare and cook, as well as being delicious. Traditionally it seems to have been served with noodles, or in vol au vent pastry cases.
EasyServes: 4 - 6 peoplePreparation time: 10 minutesCooking time: 15 minutes - less, if you have leftover turkeyIngredients: 1lb 12 oz / 800g turkey, slivered into thin stripsabout 2 tablespoons butter (or oil)1 medium onion, diced into small blocks1 red pepper and 1 green pepper, seeds removed and slivered8oz / 250g button mushrooms, sliced5 tablespoons flour2 cups chicken stock1 cup milkMethod: - Shallow fry the onions in the butter (or oil) until they are translucent and soft. Allow them to color slightly but don't let them get too brown.
- Add the slivered peppers and cook for a minute.
- If you are using raw turkey, add it at this point. Fry until it is cooked through - about 2 - 3 minutes. (If using leftover turkey, add it after the mushrooms)
- Add the mushrooms and cook for about 2 - 3 minutes until they are slightly browned. Don't let them overcook and become shrivelled-up. If you are using cooked, leftover turkey, add it now.
- Add the flour to the mixture and stir in until it is well absorbed.
- Slowly, add the stock and then the milk. Stir until the sauce thickens.
- Serve with rice and green vegetables: runner beans, peas or broccoli.
