Tomato Sauce Recipe

This Tomato Sauce Recipe is a terrific stand-by and will bail you out of many emergencies. Cook the largest bulk quantity and freeze it in four separate containers and you have four potential meals - as simple as that. Add this sauce to boneless, skinless chicken breasts and you have Easy Chicken Parmesan Recipe. It can be added to pasta, pizza, sausages and the list goes on. This really is a versatile basic to have up your sleeve. It does take a little planning ahead, but it is well worth the effort.

  1. Choose the quantity of sauce that you plan to cook and make sure that you use a pot that is big enough to hold the mixture.
  2. Dice the onions, celery, peppers and tomatoes. Crush the garlic.
  3. Fry the onions in the oil until they become transluscent and soft. Allow them to caramelize slightly as this gives flavor to the sauce.
  4. Add the celery, peppers and garlic. Fry for a further 5 mins (longer if you are doing a bigger quantity). Allow the vegetables to soften.
  5. Add the tomatoes, tomato paste, basil, coriander, sugar and chicken stock. Season with salt and pepper.
  6. Simmer until the sauce becomes rich and thick - this may take up to 30 - 40 minutes for the very large quantity. It takes about 10 - 15 minutes for the smaller quantities.
  7. Cool the sauce and pack into suitable freezer containers. Remember to label the containers ie "Tomato Sauce Recipe."
