Tomato Sauce Recipe

This Tomato Sauce recipe is a terrific stand-by and will bail you out of many emergencies. It is one of those fresh tomato recipes which you can use for a multitude of dishes. It can be used as a base for lots of vegetarian recipes if you substitute vegetable stock.

This is an authentic Italian spaghetti sauce, but it can be transformed into Chicken Parmesan, a Meatball sauce, Pizza or even Tomato Soup. Make double or triple of this recipe and freeze in suitable containers - you will be delighted when you can haul out your make-ahead freezer meals.   • Easy
  • Preparation time: 10 minutes
  • Cooking time: 20 minutes
  • Makes: 3 cups
  • Ingredients:

  • 2 medium onions
  • 1 large stick celery
  • 1 large red bell pepper
  • 1 clove garlic
  • 4 large tomatoes
  • ½ cup tomato paste
  • 1 cup chicken stock
  • 2 tablespoons fresh coriander, chopped
  • ¼ cup fresh basil, chopped (or 2 teaspoons dry basil)
  • 2 teaspoons sugar
  • salt and pepper to season
  • a little oil for shallow frying
  • Method:

  • Dice the onions, celery, peppers and tomatoes. Crush the garlic.
  • Fry the onions in the oil until they become translucent and soft. Allow them to caramelize slightly as this gives flavor to the sauce.
  • Add the celery, peppers and garlic. Fry for a further 5 minutes (longer if you are doing a bigger quantity). Allow the vegetables to soften.
  • Add the tomatoes, tomato paste, basil, coriander, sugar and chicken stock. Season with salt and pepper.
  • Simmer until the sauce becomes rich and thick - this may take up to 30 minutes if you are tripling the quantity. It takes about 10 minutes for one batch.
  • Cool the sauce and pack into suitable freezer containers. Remember to label the containers!
