EasyPreparation time: 10 minutesCooking time: 20 minutesServes: 4 - 6Ingredients: 2 medium onions, diced2 lbs / 900g plum tomatoes, roughly chopped1 clove garlic, crushed2 pints / 1 liter chicken stock2 tablespoons tomato paste1 cup loosely packed basil (about 1 oz / 30g)½ teaspoon black pepper½ teaspoon salt½ teaspoon paprikaMethod: - Brown the onions until they soften and start to turn brown.
- Add the remaining ingredients. Cook for about 20 minutes. Blend the mixture.
- Serve this Tomato Basil soup hot with a dollop of fresh cream and croutons if desired. Alternatively, serve it chilled.
