  • Cooking time: 20 minutes
  • Serves: 4 - 6
  • Ingredients:

  • 2 medium onions, diced
  • 2 lbs / 900g plum tomatoes, roughly chopped
  • 1 clove garlic, crushed
  • 2 pints / 1 liter chicken stock
  • 2 tablespoons tomato paste
  • 1 cup loosely packed basil (about 1 oz / 30g)
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • Method:

    1. Brown the onions until they soften and start to turn brown.
    2. Add the remaining ingredients. Cook for about 20 minutes. Blend the mixture.
    3. Serve this Tomato Basil soup hot with a dollop of fresh cream and croutons if desired. Alternatively, serve it chilled.
