Teriyaki Chicken Recipe

This is not an authentic Teriyaki Chicken Recipe, but it is nevertheless delicious.

"Teri" refers to the sticky glaze on the chicken and "yaki" means "grilled." Traditionally, this dish should be cooked under the grill with the skin on. However, it has been modified as one of our boneless chicken breast recipes. This is one of those simple chicken recipes using a few ingredients. Perfect if you are after easy healthy recipes.


  • Easy
  • Preparation time: 5 minutes
  • Marinading time: 1 hour (you can get away with 30 mins)
  • Cooking time: 10 minutes
  • Serves: 4 - 6
  • Ingredients:

  • 1½ lbs / 750g boneless skinless chicken breast
  • Marinade:

  • ½ cup water
  • 3 tablespoons thick dark soy sauce
  • 3 tablespoons dark brown sugar
  • 2 tablespoons mirin
  • 2 tablespoons sake
  • Teriyaki Sauce - basting sauce:

  • 4 tablespoons sake
  • 4 tablespoons soy sauce
  • 8 tablespoons mirin
  • 4 tablespoons sugar
  • Method:

    1. Cut the chicken into strips.
    2. Mix the marinade ingredients together in a large dish. Put the chicken strips into the mixture and marinade for at least an hour. You can marinade the chicken overnight.
    3. Preheat the oven to 400° F / 200° C.
    4. Mix together the basting ingredients. Drain the chicken and pat dry with kitchen paper. Place strips on a baking dish. Brush Teriyaki Sauce over the chicken strips. Bake for about 10 minutes, basting every 3 - 4 minutes.
    5. Serve with rice and a salad.
