EasyPreparation time: 10 minutesCooking time: 30 - 40 minutesServes: 4Ingredients: 1½ lbs / 700g sweet potatoes4 tablespoons oilRub ingredients: ½ teaspoon cayenne pepper2 tablespoons ground coriander1 tablespoon dried mixed herbs2 teaspoons paprika½ teaspoon saltMethod: - Mix together all the rub ingredients.
- Peel the sweet potatoes. Cut them into long fingers, about the size of a little finger. Chop off any knobbly bits that will burn. Rub with oil.
- Sprinkle the rub over the potato wedges and "massage" it in a little.
- Place the sweet potatoes on a foil-lined baking tray (this is to save on washing and not mandatory). Bake for 30 - 40 minutes, turning twice during the cooking. You will find that the potatoes shrink and don't become as crunchy as regular potatoes would. They are ready when the inside is tender and the outside is just slightly crisp.
- Try to serve these sweet potato French fries immediately.
