Sweet Potato Fries Recipe

This Sweet Potato Fries Recipe is a delicious vegetable side dish.

Alternatively serve it alongside a dip as a casual snack. See our other dry rub recipes below if you want to ring the changes. Baked sweet potato fries are the perfect accompaniment for fish, chicken and grilled meat and great if you are after vegetarian recipes. Because they are baked and not fried, you can enjoy them, in moderation, as part of a healthy eating plan.

  • Easy
  • Preparation time: 10 minutes
  • Cooking time: 30 - 40 minutes
  • Serves: 4
  • Ingredients:

  • 1½ lbs / 700g sweet potatoes
  • 4 tablespoons oil
  • Rub ingredients:

  • ½ teaspoon cayenne pepper
  • 2 tablespoons ground coriander
  • 1 tablespoon dried mixed herbs
  • 2 teaspoons paprika
  • ½ teaspoon salt
  • Method:

    1. Mix together all the rub ingredients.
    2. Peel the sweet potatoes. Cut them into long fingers, about the size of a little finger. Chop off any knobbly bits that will burn. Rub with oil.
    3. Sprinkle the rub over the potato wedges and "massage" it in a little.
    4. Place the sweet potatoes on a foil-lined baking tray (this is to save on washing and not mandatory). Bake for 30 - 40 minutes, turning twice during the cooking. You will find that the potatoes shrink and don't become as crunchy as regular potatoes would. They are ready when the inside is tender and the outside is just slightly crisp.
    5. Try to serve these sweet potato French fries immediately.
