Sweet and Sour Chicken Recipe

This Sweet and Sour Chicken Recipe (or Pineapple Chicken Recipe) is one of those boneless skinless chicken breast recipes which never fails to please. It is a winner every time and can be put on the table in 30 minutes.

  • Easy
  • Preparation time: 10 minutes
  • Cooking time: about 10 minutes to fry chicken and 10 minutes cooking thereafter
  • Serves: 4 - 6
  • Ingredients:

  • 500g chicken breasts, slivered
  • ½ cup cornflour
  • ¼ cup water
  • 1 egg
  • 2 medium carrots, peeled and julienned or cubed
  • ½ red pepper, cubed
  • ½ green pepper, cubed
  • ½ yellow pepper, cubed
  • 8oz / 250g pineapple, cubed
  • 4 tablespoons tomato sauce
  • 2 tablespoons sugar
  • 3 tablespoons brown (malt) vinegar
  • 3 tablespoons soy sauce
  • 4 tablespoons pale dry sherry
  • 2 cups chicken stock
  • oil for shallow frying
  • Method:

    1. Mix together the tomato sauce, sugar, vinegar, soy sauce and sherry. Set aside.
    2. Mix together the egg and cornflour so that it forms a batter.
    3. Heat the oil so that it is just hot enough for a tiny bit of batter to sizzle in it - don't overheat it.
    4. Dip the slivered chicken into the batter.
    5. Fry the chicken in 4 - 5 batches until the cornflour batter is golden and crisp and the chicken has cooked through. Drain on absorbent paper. Set aside.
    6. Drain the excess oil from the pan. Add the red, green and yellow peppers and the carrots. Saute gently until they are just tender.
    7. Add the pineapple. Add the soy sauce mixture. Gradually add the chicken stock - you need to guage this carefully. Add just enough to give you a sauce consistency - cook the sauce for a few minutes until it has reduced and has thickened.
    8. Add the crispy battered chicken back to the sauce. Smother with the pineapple sauce.
    9. Serve your Sweet and Sour Chicken Recipe with Rice and steamed broccoli.
