Spinach Souffle Recipe

This Spinach Souffle Recipe is one of those easy healthy recipes which is packed with nutrition.

It is ideal if you are after simple vegetarian recipes. The recipe can be made in advance up to stage 6. This quantity makes 6 ramekins, but if you have hearty appetites, it may feed 4. You could also make this Spinach Souffle recipe in a 3 pint (1½ liter) souffle dish or casserole dish. There are other fresh spinach recipes below.

  • Preparation time: 20 minutes
  • Cooking time: 20 minutes for individual ramekins or 40 minutes for a large souffle
  • Makes 6 ramekins or 1 large souffle
  • Ingredients:

  • 10oz / 300g fresh raw spinach
  • 1½ oz / 45g butter
  • ¼ cup flour
  • 1½ cups milk (whole or fat free)
  • 2 cups mature Cheddar cheese, grated
  • 6 egg yolks
  • 6 egg whites
  • ½ teaspoon salt
  • ¼ ground nutmeg
  • ground black pepper
  • You will need six ramekin dishes or one 3 pint / 1½ liter souffle or casserole dish.

    Method:

    1. Heat the oven to 375° F / 190 ° C.
    2. Grease the ramekin dishes or large souffle dish. If using ramekin dishes, it is recommended that you place them on a baking tray. This makes it easy to remove them from the oven.
    3. Wash the spinach and place it in a large pot over a high heat. Add 2 tablespoons of water if necessary. Cook the spinach for about 3 minutes, until it has just wilted. Avoid cooking the spinach to death. Drain and squeeze the water out of it. Blend the spinach so that you have a puree. Alternatively, slice the cooked spinach very finely.
    4. Melt the butter in a pot. Stir in the flour. Cook this mixture for about 1 minute. Slowly add the milk, stirring all the time. Allow the mixture to simmer and thicken. Essentially, you have made a white sauce.
    5. Stir in the cheese and spinach.
    6. Remove the pot from the heat. Stir in the egg yolks. (If you attempt to do this over the heat, the yolks will scramble.)
    7. Beat the egg whites until they form stiff peaks. Immediately FOLD the whites into the cheese mixture, using a metal spoon. Don't over-mix as you will run the risk of beating the air out of the mixture.
    8. Season with salt, nutmeg and a grind of black pepper.
    9. If using a souffle dish or casserole: bake for about 40 minutes. The souffle is ready when it is well risen and slightly brown on top.
    10. If you are using ramekins: divide the mixture between the dishes. Bake for about 20 minutes without opening the oven.
    11. Serve this Spinach Souffle recipe immediately with a salad. Delicious!
