Spinach Quiche Recipes

Crustless Quiche Recipe

  • Easy
  • Preparation time: 10 minutes
  • Cooking time: 15 - 20 minutes
  • Serves: 4- 6
  • Ingredients:

  • 12oz / 350g fresh spinach
  • 1 large onion, diced
  • 5 eggs
  • ¼ cup whole milk
  • ¼ teaspoon salt*
  • ¼ teaspoon black pepper
  • 7oz / 200g feta cheese, crumbled
  • little oil for shallow frying
  • ½ cup very finely grated Parmesan cheese (powdered Parmesan will do well)
  • You may omit the salt if your feta is very salty.

    You will need a 10 inch / 25cm quiche dish.

    Method:

    1. Heat the oven to 350° F / 180° C.
    2. Wash the spinach well. Chop the leaves into fine shreds. Bring about 2 cups of water to the boil in a large pot. Add the spinach and replace the lid. Cook for about 1 - 2 minutes and drain immediately. What you are wanting to do is blanch the spinach. You don't want to boil it so hard that it becomes limp and soggy. Your shredded spinach should be just cooked but still have some "life" in it. Set aside.
    3. Heat about 2 tablespoons oil and brown the onion. Allow it to soften and caramelize slightly as this will give flavor to the quiche.
    4. Meanwhile, beat together the eggs, milk, feta, salt and pepper. This is quickly done if you have a food processor, but hardly a chore if you don't!
    5. Brush the quiche dish very lightly with oil. Sprinkle the spinach shreds over the base. Now spinkle over the browned onion. Mix the onions and spinach up a little. Now pour over the egg mixture. Lastly, sprinkle over the Parmesan Cheese. Bake for about 15 - 20 minutes until the egg has just set. Avoid overcooking the quiche otherwise the egg will become dry and rubbery!
    6. Serve with a large green salad or Lighter, Healthier 7 Layer Salad Recipe.

    Spinach Quiche Recipes: Variations

    1. Add 6oz / 180g sliced mushrooms to the browned onions. Continue to cook over a high heat for about 4 minutes until the mushrooms brown. Cook them quickly so that they retain their shape and don't shrivel up and become watery.
    2. Add 4oz / 120g smoked salmon once you have layered the spinach and onion.
    3. Add 4oz / 120g sliced black olives once you have layered the spinach and onion.
    4. Make Quiche Crust Recipe. Follow the instructions for baking blind. Fill the pie crust and bake for about 20 minutes until the egg custard has just set.
