Spinach Cheese Quiche Recipe
This Spinach Cheese Quiche Recipe differs from our Crustless Spinach Quiche Recipe in that it offers a crisp pastry crust. It uses fewer eggs and the focus is on the spinach rather than on the custard. | It is one of those easy quiche recipes whereby it is easy to ring the changes: omit the olives, add a little shredded chicken or some sauteed mushrooms, use Mozzarella or Gorgonzola - play around. EasyPreparation time: 30 minutesCooking time: 20 minutes for crust, 30 minutes for quicheServes: 8 - 10 slicesIngredients: Quiche Crust Recipe: 8oz / 250g cream cheese (low fat)8oz / 250g butter, at room temperature8oz / 250g flour1 teaspoon saltThis amount yields 1½ lbs / 700g dough. Any leftover dough can be rolled out and cut into strips. Sprinkle over a little cheese and bake for 10 minutes. Voila! You have some easy Cheese Straws. Spinach Filling: 1lb / 450g spinach, very finely shredded2 medium onions, chopped quite finely4oz / 120 g black olives, pitted and sliced in half4oz / 120g feta2 eggs½ cup single cream½ cup Parmesan cheese, very finely grateda little oil You will need a 12½ " / 32cm loose bottom shallow tart tin. Method: - Combine the butter, cream cheese, flour and salt. This is easily done in a processor, but not a hardship if you are doing it by hand. As soon as the dough is well mixed and starts to "clump" stop kneading. Wrap the dough in grease-proof paper and refrigerate for half an hour.
- Heat the oven to 350° F / 200° C. Bake the pastry blind. You can follow the instructions for this at Quiche Crust Recipe. It is not necessary to do the extra egg wash as specified in the Quiche Crust Recipe.
- Place the spinach in a large saucepan and add a couple of tablespoons of water. Steam for about 3 minutes until the spinach has just wilted. Avoid overcooking the spinach. Drain and then squeeze out as much of the water as you can. This is easily done if you place a side plate over the spinach in the colander and then place a large can on top of it to act as a weight.
- Fry the onions in a little oil until they are soft and translucent. Add the wilted spinach and olives. Crumble the feta into the mixture. Place this mixture in the cooked quiche shell.
- Mix together the cream and eggs and pour over the spinach. Sprinkle over the Parmesan. Bake for about 20 - 30 minutes until the custard has just set.
