Shortbread Cookie Recipe

EasyPreparation time: 20 minutesCooking time: 10 - 12 mintuesMakes about 40 crescentsIngredients: 8oz / 250g butter½ cup confectioners' sugar (icing sugar)2 teaspoons instant coffee2 teaspoons hot water2¼ cups flour, sifted¼ teaspoon salt¾ cup pecan nuts, choppedextra confectioners' sugar or superfine sugar for dustingYou will need 2 - 3 ungreased baking sheets. Method: - Preheat oven to 400° F / 200° C.
- Cream the butter and confectioners' sugar until light and fluffy. Using an electric beater makes this very quick.
- Mix the coffee and hot water and add to the butter mixture.
- Add the flour, salt and pecans. Mix until to have a sandy dough. Avoid over-handling the dough so you needn't form it into a big ball.
- Take a piece of dough about the size of a large walnut. Shape it into a sausage shape. Place it on the baking sheet and curve it into a crescent. Repeat until the dough is finished.
- Bake for 10 - 12 minutes or until the cookies are pale gold in color. They shouldn't "sizzle" at all and should be slightly firm to the touch. (They will crisp up as they cool.)
- Remove them from the oven and dust the crescents with either confectioners' sugar or superfine sugar.
- Cool on wire trays and then store in airtight containers.
