Shortbread Cookie Recipe

This Shortbread Cookie recipe is a treat!

This is one of those easy cookie recipes which is versatile. Use this shortbread cookies recipe if you are after easy Christmas cookie recipes or cookie gift basket ideas. However, this also makes a great dessert recipe served alongside ice-cream and poached plums. These are glamorous gourmet cookies, but really easy to make.


  • Easy
  • Preparation time: 20 minutes
  • Cooking time: 10 - 12 mintues
  • Makes about 40 crescents
  • Ingredients:

  • 8oz / 250g butter
  • ½ cup confectioners' sugar (icing sugar)
  • 2 teaspoons instant coffee
  • 2 teaspoons hot water
  • 2¼ cups flour, sifted
  • ¼ teaspoon salt
  • ¾ cup pecan nuts, chopped
  • extra confectioners' sugar or superfine sugar for dusting
  • You will need 2 - 3 ungreased baking sheets.

    Method:

    1. Preheat oven to 400° F / 200° C.
    2. Cream the butter and confectioners' sugar until light and fluffy. Using an electric beater makes this very quick.
    3. Mix the coffee and hot water and add to the butter mixture.
    4. Add the flour, salt and pecans. Mix until to have a sandy dough. Avoid over-handling the dough so you needn't form it into a big ball.
    5. Take a piece of dough about the size of a large walnut. Shape it into a sausage shape. Place it on the baking sheet and curve it into a crescent. Repeat until the dough is finished.
    6. Bake for 10 - 12 minutes or until the cookies are pale gold in color. They shouldn't "sizzle" at all and should be slightly firm to the touch. (They will crisp up as they cool.)
    7. Remove them from the oven and dust the crescents with either confectioners' sugar or superfine sugar.
    8. Cool on wire trays and then store in airtight containers.
