EasyPreparation time: 5 minutes Cooking time: 10 minutesServes: 4 peopleIngredients: 8oz / 250g boneless skinless chicken breasts2 tablespoons peanut oil2 teaspoons galangal1 tablespoon tamarind paste1 teaspoon shrimp paste1 tablespoon dark soy sauce4 pickled lime leaves¼ cup sesame seedsMethod: - Cut the chicken breasts into slivers.
- Mix together the galangal, tamarind paste, shrimp paste, soy sauce and lime leaves.
- Heat the peanut oil in a wok. Add the chicken slivers and fry until the chicken is cooked through (about 5 minutes).
- Add the soy sauce mixture and cook for a minute, allowing the sauce to reduce.
- Add the sesame seeds and cook for a further minute, being careful not to burn the seeds.
- Serve with pasta or rice and fresh vegetables.
