Salmon Patties Recipe

This Salmon Patties Recipe makes a delicious family supper. If your potatoes are mashed ahead of time, this makes a quick meal to assemble. You may substitute canned tuna for canned salmon. Alternatively, you can substitute with any white fish that you may have. The fish should be cooked in advance because this recipe relies on the fact that the patties are fried for a short time. If you are lucky enough to have fresh fish, simply poach it and then follow the rest of the recipe. This recipe would also work for cooked Basa fish fillets (Vietnamese River Cobbler).

This Salmon Patties Recipe is also great in lunch boxes or for outdoor meals. Serve the patties with Tzatziki Sauce.




  • Easy
  • Serves 4 - 6
  • Preparation time:
  • Frying time: about 15 - 20 minutes

  • Ingredients:

  • 10oz / 300g canned salmon or tuna
  • 1lb / 450g potatoes
  • 3 tablespoons fresh parsley , chopped
  • 3 tablespoons fresh coriander, chopped
  • 2 tablespoons capers, chopped (optional, but delicious)
  • 3 small gherkins, chopped
  • 2 tablespoon lemon juice
  • ½ teaspoon cayenne pepper
  • salt and pepper to season
  • 2 egg
  • 1 cup commercial breadcrumbs
  • Oil for shallow frying
  • Method:

    1. Peel the potatoes and cut them in half. Boil them until they are soft. Mash the potatoes (without adding milk or butter).
    2. In a large bowl, combine the tinned salmon or tuna, mashed potato, parsley, coriander, capers, gherkins, lemon juice and cayenne pepper. Season with salt and pepper. Add more cayenne pepper if you want spicier fish cakes.
    3. Shape the mixture into 12 patties.
    4. In a flattish bowl, beat the eggs with a fork. Place the breadcrumbs in another flattish bowl.
    5. Heat the oil over a low heat.
    6. Dip the fishcakes first in the egg and then in the breadcrumbs, making sure that they are well coated.
    7. Fry the Salmon Patties over a low heat for about 3 - 4 minutes on each side, turning them gently. Fry about 4 patties at a time. Drain on absorbent paper. I often find that I have to wipe the pan out between batches of fishcakes. Simply use absorbent kitchen paper, wipe the leftover burnt breadcrumbs out of the pan, and then add more oil and continue with the next batch.
    8. Serve with a big salad.
