Salmon Croquette

Fresh Salmon Cake Recipe with Pickled Ginger and Soy Sauce

This Salmon Croquette recipe is one of those great salmon recipes.

The salmon is mixed with a hint of soy sauce and pickled ginger. Although they are a little effort, these croquettes are delicious. They are also great in lunch boxes. You can shape these round like Salmon Patties, or in the more traditional oblong croquette. I find the flatter, rounder shape easier to fry. Croquettes make good use of leftover salmon fillet recipes (see below).

  • A little effort
  • Preparation time: 15 minutes
  • Cooking time: 20 minutes
  • Makes about 18 croquettes or patties
  • ingredients:

  • 1lb 3oz / 550g fresh salmon
  • 1lb/ 450g potatoes, peeled and halved
  • 2 tablespoons pickled ginger, finely chopped
  • 2 tablespoons soy sauce
  • 2 eggs beaten in a flattish bowl
  • 1 cup flour in a flattish bowl
  • Method:

    1. Boil the potatoes until they are soft. Drain. Mash until there are no lumps. (Don't add any butter or milk to the mashed potatoes.)
    2. "Shred" the fresh salmon - this is easily done in a blender.
    3. Mix together the mashed potato, salmon, pickled ginger and soy sauce. (Don't be temped to mix together in the blender as the potato will just turn to a "goo".)
    4. Using your hands, form into croquettes or patties.
    5. Heat the oil in the frying pan. Dip each croquette first in the egg and then in the flour.
    6. Fry gently for about 4 minutes on each side, until the salmon is cooked through. Serve with a big salad.
