Salmon Croquette - Fresh Salmon Cake Recipe with Pickled Ginger and Soy Sauce
This Salmon Croquette recipe is a great way of using up leftover salmon or salmon that is not so fresh that you wouldn't want to use it for sushi. The fresh salmon is mixed with a hint of soy sauce and pickled ginger. Although they are a little effort, these croquettes are delicious. They are also great in lunch boxes. You can shape these round like a Salmon Pattie, or in the more traditional oblong croquette. I find the flatter, rounder shape easier to fry.
A little effortPreparation time: 15 minutesCooking time: 20 minutesMakes about 18 croquettes or pattiesingredients: 1lb 3oz / 550g fresh salmon1lb/ 450g potatoes, peeled and halved2 tablespoons pickled ginger, finely chopped2 tablespoons soy sauce2 eggs beaten in a flattish bowl1 cup flour in a flattish bowlMethod: - Boil the potatoes until they are soft. Drain. Mash until there are no lumps. (Don't add any butter or milk to the mashed potatoes.)
- "Shred" the fresh salmon - this is easily done in a blender.
- Mix together the mashed potato, salmon, pickled ginger and soy sauce. (Don't be temped to mix together in the blender as the potato will just turn to a "goo".)
- Using your hands, form into croquettes or patties.
- Heat the oil in the frying pan. Dip each croquette first in the egg and then in the flour.
- Fry gently for about 4 minutes on each side, until the salmon is cooked through. Serve with a big salad.
