Roast Chicken Cooking Time

Oven Baked Whole Chicken with Garlic, Orange and Rosemary Rub

People are often daunted by getting the roast chicken cooking time precise.

You can work on about 1¼ hours for a 4lb / 1.8kg bird. However, if you follow the instructions below for your oven baked whole chicken, you should produce a delectable meal. The rub recipe works really well. It is a combination of spiciness and freshness. It also works well as a rotisserie chicken rub recipe.


  • Easy
  • Preparation time: 5 minutes
  • Cooking time: about 1¼ hours
  • Serves: Each chicken feeds about 4 - 6 people
  • Ingredients:

  • 2 whole chickens (giblets removed) each weighing about 4lb / 1.8kg
  • Rub mixture:

  • 2 cloves garlic, crushed
  • 2 tablespoons orange rind
  • 1 teaspoon fresh rosemary, finely snipped
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 2 tablespoons soft butter
  • Method:

    1. Heat the oven to 350° F / 180° C.
    2. Wash and dry the chickens.
    3. Mix together the rub ingredients.
    4. Massage the mixture into the skins of each chicken.
    5. Place both chickens upside down in an ovenproof dish.
    6. Bake for 45 minutes. Turn the chickens over and bake for a further 30 minutes until the skins are golden brown and crisp.
    7. Insert a knife into the joint where the thigh joins the breast. If the chicken is cooked, the juices will run clear. If there is blood or the liquid is slightly pink, return the chickens to the oven and cook for a while longer.

    If you are going to cook one chicken you may as well cook two. Use the second chicken as part of this meal if you are feeding a crowd.
