Recipe for Chicken Parmesan
This recipe for Chicken Parmesan always goes down a treat - there is never a glum face when this appears. | It is one of those boneless skinless chicken breast recipes which is well worth the effort. The amount of cheese has been reduced in this recipe and preparation has been kept to a minimum. If you are sticking to a really strict healthy diet plan, you can oven bake the chicken and omit the cheese altogether. |

Ingredients: 1¼ lbs / 600g boneless skinless chicken breasts1 onion, chopped1 clove garlic1 can peeled tomatoes¼ cup fresh basil, chopped1 egg, beaten2 cups seasoned fresh breadcrumbs (about 2 slices of bread)½ cup Parmesan, Mozzarella or Cheddar, finely gratedsalt and pepper to seasonoil for shallow fryingMethod: - Start by making the tomato sauce. Fry the onion in a little oil until it is soft and translucent. Add the garlic clove, tomatoes and basil. Cook for about 10 minutes until you have a thick sauce. Season with salt and pepper.
- Cut the chicken fillets almost in half and open them out. Alternatively, you can cut the fillets into 2 so that you have 8 very thin pieces. This works well if you have kids who are not going to eat big portions.
- Heat a little oil in a frying pan. It should just sizzle when you drop a breadcrumb into it. Dip one of the chicken breasts first in the beaten egg and then in the breadcrumbs. Fry for about 4 minutes and then turn over and fry for a further 3 minutes until the breadcrumbs are golden and crisp. Avoid burning the breadcrumbs. If needs be, turn down the heat. You should be able to fry 2 fillets at a time. When cooked, set them on an ovenproof tray or dish and fry the other 2. The chicken should be cooked all the way through and not pink on the inside.
- Place 2 - 3 tablespoons of tomato sauce on each piece of fried chicken. Sprinkle over a little cheese. Place under a hot grill for about 2 minutes until the cheese has melted.
- Serve this recipe for Chicken Parmesan with pasta and a big green salad.
