Recipe for Chicken Parmesan

This recipe for Chicken Parmesan always goes down a treat - there is never a glum face when this appears.

It is one of those boneless skinless chicken breast recipes which is well worth the effort. The amount of cheese has been reduced in this recipe and preparation has been kept to a minimum. If you are sticking to a really strict healthy diet plan, you can oven bake the chicken and omit the cheese altogether.


  • A little effort (easy if you have a batch of Tomato Sauce already made up)
  • Preparation time: 10 minutes
  • Cooking time:10 mins for tomato sauce, 15 mins to fry chicken, 2 mins under grill
  • Serves: 4 - 6
  • Easy Chicken Parmesan Recipe offers another variation.

    Ingredients:

  • 1¼ lbs / 600g boneless skinless chicken breasts
  • 1 onion, chopped
  • 1 clove garlic
  • 1 can peeled tomatoes
  • ¼ cup fresh basil, chopped
  • 1 egg, beaten
  • 2 cups seasoned fresh breadcrumbs (about 2 slices of bread)
  • ½ cup Parmesan, Mozzarella or Cheddar, finely grated
  • salt and pepper to season
  • oil for shallow frying
  • Method:

    1. Start by making the tomato sauce. Fry the onion in a little oil until it is soft and translucent. Add the garlic clove, tomatoes and basil. Cook for about 10 minutes until you have a thick sauce. Season with salt and pepper.
    2. Cut the chicken fillets almost in half and open them out. Alternatively, you can cut the fillets into 2 so that you have 8 very thin pieces. This works well if you have kids who are not going to eat big portions.
    3. Heat a little oil in a frying pan. It should just sizzle when you drop a breadcrumb into it. Dip one of the chicken breasts first in the beaten egg and then in the breadcrumbs. Fry for about 4 minutes and then turn over and fry for a further 3 minutes until the breadcrumbs are golden and crisp. Avoid burning the breadcrumbs. If needs be, turn down the heat. You should be able to fry 2 fillets at a time. When cooked, set them on an ovenproof tray or dish and fry the other 2. The chicken should be cooked all the way through and not pink on the inside.
    4. Place 2 - 3 tablespoons of tomato sauce on each piece of fried chicken. Sprinkle over a little cheese. Place under a hot grill for about 2 minutes until the cheese has melted.
    5. Serve this recipe for Chicken Parmesan with pasta and a big green salad.

    Leftovers can be frozen, used in lunchboxes or sliced and added to Garlic Chicken Pasta Recipe or one of the other Easy Pasta Recipes.

    It is worth making up a double batch of Pasta Sauce or Tomato Sauce Recipe. Then this Chicken Parmesan takes no time to make at all.
