Recipe for Chicken Breast

wrapped in bacon and stuffed with coriander and lemon

Try this recipe for Chicken Breast wrapped in Bacon. It is stuffed with coriander, garlic and lemon zest and then baked. This is one of the easiest boneless skinless chicken breast recipes and tastes fabulous.

  • Easy
  • Preparation time: 10 minutes
  • Cooking time: 20 minutes
  • Serves: 4
  • Ingredients:

  • 4 boneless, skinless chicken breasts weighing 1lb / 450g
  • 8oz / 250g back bacon (as lean as possible)
  • 1oz / 30g butter
  • 1 cup loosely packed fresh coriander, chopped
  • zest of 1 large unwaxed lemon *
  • 1 small clove garlic, crushed
  • ½ teaspoon salt
  • freshly ground pepper
  • about 3 tablespoons olive oil
  • You will need a small ovenproof dish that will take the 4 chicken fillets.

    Method:

    1. Preheat the oven to 350° F / 180° C.
    2. Brush the ovenproof dish with the olive oil.
    3. Mix together the butter, coriander, lemon zest, garlic, salt and pepper. This can be easily done if you have a food processor.
    4. Take one chicken breast and slit it ALMOST in half. Flap the breast open. Put 1 - 2 teaspoons of the coriander mixture in the middle and then close the flap.
    5. Wrap 2 - 3 pieces of bacon around the chicken, trying to put the folds under the chicken.
    6. Place the wrapped chicken in the ovenproof dish. Repeat for the remaining chicken breasts.
    7. Bake for 10 minutes and then baste with the juices that collect in the dish. Cook for a further 10 minutes until the chicken is cooked all the way through. Avoid overcooking the chicken as it will dry out. Make a slit in one of the wrapped breasts to see if it is ready.
    8. You can serve this recipe for chicken breast wrapped in bacon with Garlic Mash Potato Recipe and vegetables or a salad. Alternatively, you could serve the breasts ready sliced as part of a cold buffet or picnic. Leftovers make great lunchboxes!


    Why unwaxed lemons? There are various additives, like fungicides, that are added to the waxing process of citrus fruit. These all help to preserve the fruit and add to its shelf-life. Therefore, when adding zest to a recipe, try to use unwaxed citrus. If you only able to get hold of waxed lemons, you can pop them into boiling water for a minute and then give them a good scrub.
