Pineapple Upside Down Cake Recipe

This Pineapple Upside Down Cake recipe is so old-fashioned!

However, it is one of those simple dessert recipes which is well worth making. If you are after quick, easy dessert recipes this has to be it! You can ring the changes as far as fruit goes: use fresh or canned apricots or peaches. However, do pay a little attention as to how you arrange the fruit, because the visual appeal is important here.


This is also one of the best cake recipes for serving with coffee! Have fun.

  • Easy
  • Preparation time: 15 minutes
  • Cooking time: 30 - 45 minutes
  • Serves: 8
  • Ingredients:

  • 2oz / 60g butter
  • ½ cup sticky brown sugar
  • 1 tin pineapple rings - about 10 - 12 rings
  • 6 - 10 maraschino cherries
  • 3 eggs
  • 1 tablespoon orange rind
  • 1 cup pale brown sugar
  • ½ cup milk
  • 1 teaspoon vanilla essence
  • 1½ cups flour
  • 1 teaspoon baking powder
  • You will need a greased round 10" (25cm) pie dish or casserole dish. You needn't be restricted to a round dish - this recipe can just as easily be made in a square or rectangular dish.

    Method:

    1. In a small pot, heat the butter and sugar. Pour this mixture into the base of the greased pie dish.
    2. Arrange the pineapple rings and cherries in an attractive pattern on top of the butter mixture.
    3. Beat the eggs until they are thick and pale. Add the sugar and orange rind. Continue to beat until the mixture is thick and a pale lemon color.
    4. Add the milk and vanilla essence.
    5. Sift together the flour and baking powder. Gently fold the flour into the batter.
    6. Pour the batter carefully over the pinapples, being careful not to dislodge them. Bake for between 30 - 45 minutes, or until a skewer inserted into the cake comes out clean.
    7. Place a large flat plate over the pie dish. With a quick, confident movement, invert the pie dish and allow the cake to plop onto the plate. Leave the pie dish on top of the cake to allow the last of the syrup to drip onto the pineapple.
    8. When you are ready to serve, remove the pie dish and serve the Pineapple Upside Down with thick cream.
