Mushroom Soup Recipes
These delicious Mushroom Soup Recipes are all so quick and easy to make, that you'll never want to eat another canned soup again! Follow the basic recipe and made the modifications as desired. The addition of white wine is entirely optional, but makes all the difference.
EasyPreparation time: 5 minutesCooking time: 15 minutesServes 4 - 6Ingredients: 2 medium onions, finely diced4 tablespoons butter1 lb / 450g button mushrooms, thickly sliced2 tablespoons flour2 cups chicken stock (made up with stock cube or powder)2 cups milk½ cup white wine (optional)ground black pepper to seasonMethod: - Melt 2 tablespoons butter in a pot. Gently fry the onions over a low heat until they are soft and a light caramel color. This helps to give flavor to the soup. Fry for about 5 minutes
- Add the other 2 tablespoons of butter. Turn up the heat and add the mushrooms. Fry for about 2 minutes until they are slightly brown. (Avoid burning the butter). You don't want the mushrooms to become all gray and watery - this is why I advocate your cooking them over a high heat for a short time. This way, they retain their shape and look appealing in the soup.
- Add the flour and stir for about one minute.
- Slowly add the chicken stock, and then the milk and wine. Cook over a low heat for about 5 minutes until the mushrooms are cooked through and the flavors have melded. Try to keep the soup just below the boil (although not grave if it does boil).
Mushroom Soup - Vegetarian Option Substitute the chicken stock for vegetable, onion or mushroom stock.More Mushroom Soup Recipes and Ideas Add 1 cup of cooked shredded chicken to your soup, just before serving.Add ½ cup chopped crisp bacon just before serving. For a richer, more decadent soup, substitute one cup of cream for one cup of milk.Add 1 - 2 tablespoons of chopped fresh rosemary to the fried onions.
