Lemon Poppy Seed Muffin Recipe

This Lemon Poppy Seed Muffin Recipe contains buttermilk, thus producing a light, delicious result.

It is ideal if you are after easy picnic recipes or school lunch ideas and lunchbox fillers. The icing is optional. Serve it as one of your healthy breakfast recipes or when friends pop in for coffee. You are thinking "Healthy muffin recipe?"   • Cooking time: 20 minutes
  • Makes 12 muffins
  • Ingredients:

  • 4oz / 120g butter, slightly softened (but not melted)
  • ¾ cup sugar
  • 2 eggs
  • 1 cup buttermilk
  • ¼ cup poppy seeds
  • 1 teaspoon vanilla essence
  • 2 tablespoons lemon juice
  • zest of one unwaxed lemon
  • 1½ cup flour
  • 1 teaspoon bicarbonate of soda
  • Icing (optional):

  • ½ cup plain yogurt
  • 2 tablespoons butter
  • 1 cup icing sugar
  • 2 tablespoons lemon zest
  • Method:

    1. Preheat the oven to 350° F / 180° C.
    2. Line a 12-hole muffin tray with 12 muffin papers. Spray them with cooking oil.
    3. Cream the butter and sugar until they are pale and fluffy. It is best to use an electric beater.
    4. Add the eggs and buttermilk. Add the poppy seeds, lemon zest, lemon juice and vanilla essence. Mix.
    5. Mix the bicarbonate of soda into the flour. Add to the batter. Don't beat the flour in. Mix gently with a spoon. Your batter should be well combined but avoid "over-mixing" as your muffins will turn out to be heavy.
    6. Divide the mixture between the muffin cases.
    7. Bake for about 20 minutes until the muffins are slightly brown and cooked through.
    8. Cool the muffins on a wire tray.
    9. Optional Icing: Place all the icing ingredients in a small pot. Bring to the boil. Boil for about 2 minutes. Drizzle over the muffins. This is a thin, light icing and doesn't really set hard.
