Leftover Ham Recipes

Ham and Chicken Pie

This is one of those ideal leftover ham recipes. It is a mixture of a chicken pie recipe and a ham casserole. The result is a satisfying pie and no-one will be complaining that they are seeing ham the next day!

  • Easy
  • Preparation time: 15 minutes
  • Cooking time: 20 - 30 minutes
  • Ingredients:

  • 7oz / 200g cooked chicken, shredded
  • 14oz / 400g cooked ham, diced
  • 2 tablespoons oil
  • 1 medium onion, diced
  • 1 carrot, diced
  • 1lb / 250g mushrooms, sliced
  • 1 cup loosely packed parsley
  • 2 tablespoons flour
  • 2 cups milk
  • 14oz / 400g puff pastry
  • salt and pepper to season
  • Method:

    1. Heat the oven to 400° F / 200° C.
    2. Fry the onion gently in the oil, until it is soft.
    3. Add the diced carrot and fry for about 3 minutes, until the onions and carrots are slightly browned.
    4. Add the mushrooms and fry for a minute. Don't let them overcook, otherwise they will become mushy and lose their shape.
    5. Add the parsley.
    6. Stir in the flour and cook for a minute.
    7. Slowly add the milk, stirring constantly to avoid lumps developing.
    8. Add the chicken and ham. Season to taste.
    9. Transfer the mixture to a pie dish.
    10. Roll the puff pastry out to the right diameter. Place gently on top of the mixture, making sure that there is enough overlap around the sides of the dish. Decorate the top with any remaining pieces of pastry. Cut a few slits in the pastry topping in order to allow the steam to escape.
    11. Bake for about 20 - 30 minutes, until the pastry is crisp and golden brown. Serve with a big salad.
