Leftover Ham Recipes
Ham and Chicken Pie
This is one of those ideal leftover ham recipes. | It is a mixture of a chicken pie recipe and a ham casserole. The result is a satisfying pie and no-one will be complaining that they are seeing ham the next day! This is one of our favorite simple chicken recipes. EasyPreparation time: 15 minutesCooking time: 20 - 30 minutesIngredients: 8oz / 250g cooked chicken, shredded1 lb / 450g cooked ham, diced2 tablespoons oil1 medium onion, diced1 carrot, diced8oz / 250g mushrooms, sliced1 cup loosely packed parsley2 tablespoons flour2 cups milk1 lb / 450g puff pastrysalt and pepper to seasonMethod: - Heat the oven to 400° F / 200° C.
- Fry the onion gently in the oil, until it is soft.
- Add the diced carrot and fry for about 3 minutes, until the onions and carrots are slightly browned.
- Add the mushrooms and fry for a minute. Don't let them overcook, otherwise they will become mushy and lose their shape.
- Add the parsley.
- Stir in the flour and cook for a minute.
- Slowly add the milk, stirring constantly to avoid lumps developing.
- Add the chicken and ham. Season to taste.
- Transfer the mixture to a pie dish.
- Roll the puff pastry out to the right diameter. Place gently on top of the mixture, making sure that there is enough overlap around the sides of the dish. Decorate the top with any remaining pieces of pastry. Cut a few slits in the pastry topping in order to allow the steam to escape.
- Bake for about 20 - 30 minutes, until the pastry is crisp and golden brown. Serve with a big salad.
