Lamb Shank Recipe

This Lamb Shank Recipe is very quick to prepare. As with most lamb stew recipes, it is imperative that you give the shanks a long, slow bake at a low temperature.

This allows the meat to cook gently and produce a succulent, rich result. This is one of those perfect make-ahead meals, and if you are not needing to eat this right away, you can turn the oven off after the 3 hours and leave the shanks in the cooling oven.   • Cooking time: about 3 hours
  • Serves: 4 - 6
  • If you want to change the flavor, you could use the spices from Lamb Tagine Recipe.

    Ingredients:

  • 4 lamb shanks, 3½ lbs / 1½ kg
  • 2 onions, chopped
  • 1 cup tomato ketchup
  • 2 cups beef stock
  • ½ cup red wine (optional)
  • 1 teaspoon paprika
  • 1 teaspoon fennel seed
  • a little oil for shallow frying
  • You will need a casserole dish with a lid. It is worth using one that can be used on the hob as well to save on washing-up.

    Method:

    1. Heat the oven to 300° F / 150° C.
    2. Trim any excess fat off the lamb shanks. Heat a little oil. Brown the lamb shanks all over. Set aside.
    3. Brown the onions until they are a deep caramel color. This helps to give the dish flavor.
    4. Add the lamb shanks back to the casserole dish with the onions. Add the tomato ketchup, the beef stock, wine, paprika and fennel seeds.
    5. Place a lid on the casserole pan. Bake the lamb shanks for about 3 hours or until really tender. The meat should pull off the bone easily when the shanks are ready. Do check every ½ hour during the cooking process and add extra liquid if necessary.
    6. Serve your lamb shank recipe with couscous or quinoa and Roasted Vegetables Recipe.
