How to Make Meatballs

Spaghetti and Meatballs Recipe

If you want to know how to make meatballs that are really light and tasty, you will find that this recipe is a hit.

Plus, it makes enough for two meals. Serve one now and freeze the other for use on a busy day. Unlike our Swedish Meatballs recipe, this one uses Parmesan in the mixture. The result is another spaghetti and meatballs recipe that your family will love.


  • Easy
  • Preparation time: 15 minutes
  • Cooking time: 40 minutes
  • Makes about 36 meatballs (enough for 2 meals for 4 people)
  • Meatball Ingredients:

  • 2lbs / 900g lean ground beef
  • 4 slices brown bread, broken into crumbs
  • ½ medium onion, finely chopped
  • 1 clove garlic, crushed
  • 1 egg, beaten
  • 1 cup loosely packed parsley, chopped
  • 2 tablespoons double cream
  • ¼ cup Parmesan, finely grated
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Oil for shallow frying
  • Tomato Sauce Ingredients:

  • 2½ - 3 cups Homemade Tomato Salsa
  • ½ cup red wine
  • If you don't have Homemade Tomato Salsa already made, you can substitute with a commercial tomato salsa or Pasta Sauce.

    You will need a frying pan with a lid.

    Method:

    1. Put the ground beef in a large bowl and add all the meatball ingredients except the cooking oil and tomato sauce ingredients. (If you have a processor, you can simply add the brown bread, onion, garlic, egg, cream, Parmesan, parsley, salt and pepper. Blitz until the mixture is combined and then add to the meat.)
    2. Roll the meat into balls somewhere between the size of a walnut and a golf ball. Heat a little oil in a large frying pan. Add about 10 meatballs at a time. Fry briefly, turning the meatballs every minute, until they are brown all over. They needn't be cooked all the way through. Set aside and repeat the process until all the meatballs have been browned.
    3. Discard any excess oil and wipe out the pan. Add the meatballs back to the pan. Pour over the Homemade Tomato Salsa and red wine. Place a lid on the pan and simmer over a gentle heat for 30 - 40 minutes until the meatballs have cooked through and the sauce has thickened. Stir very gently to prevent sticking - you don't want to break the meatballs.
    4. Serve with pasta and a green salad.
