How to Grill Chicken Kebabs?

People often ask how to grill chicken kebabs. We all need easy chicken recipes up our sleeve and these Chicken Kebabs fit the bill! Cook them under the grill or on the barbeque - they make a quick, special meal. The key is to marinade the kebabs for at least 6 hours - or even overnight. This way they are succulent. The other trick is to cook them for a short time at a high heat.

NOTE: In order to make the Chicken and Pasta Recipe (see Smart Leftovers - October Meal Plan), you will need to marinade an extra 1½ lb / 650g chicken breasts. Double the marinade. However, don't cube or thread this extra meat onto skewers. Don't be put off...it is hardly any extra preparation and you gain another easy chicken recipe. Refrigerate this extra meat.

  • Serves 4-6
  • Preparation time: 10 minutes
  • Cooking time: 10 - 15 minutes
  • Ingredients:

  • 1¾ lb / 800g chicken breasts, cut into approx 1 inch cubes
  • 8 wooden skewers
  • Marinade:

  • 3 tablespoons olive oil
  • ¼ cup fresh lemon juice
  • 1 clove garlic, crushed
  • pinch dried oregano
  • salt and pepper to season
  • Mint Yoghurt Raita:

  • 1 cup plain yoghurt
  • 2 tablespoons fresh mint leaves, finely chopped
  • salt and pepper to season
  • Method:

    1. Divide the cubed chicken meat and thread equally onto the skewers.
    2. Mix all the marinade ingredients in a shallow dish (preferably with a lid). Place the skewers in the marinade and refrigerate for 6 hours.
    3. Right! How to grill chicken kebabs? Simple. Heat the grill to a high temperature - 425° F / 220° C. Place the kebabs on a baking tray and pop them under the grill. Cook for about 10 minutes, turning 2 or 3 times, so that they are browned all over. Be careful that they don't burn on one side. Check that that chicken is cooked through by cutting into one of the cubes - there should be no pink meat at all.
    4. Mix together the ingredients for the Mint Yoghurt Raita in a small bowl.
    5. Serve the grilled kebabs with Pita Bread, Mint Yoghurt Raita and a large salad.

    Alternatively, the kebabs are ideal cooked on the barbeque - again, keep turning them to avoid burning them.
