How to Grill Chicken Kebabs?

People often ask how to grill chicken kebabs. We all need easy chicken recipes up our sleeve and this chicken skewer recipe fit the bill!

Cook them on the grill, under the broiler or on the barbeque - they make a quick, special meal. The key is the grilled chicken marinade. Marinade the kebabs for at least 6 hours - or even overnight. This way they are succulent. The other trick is to cook them for a short time at a high heat. See our Chicken Barbeque Recipe below if you want an alternative marinade.

  • Easy
  • Serves 4-6
  • Preparation time: 20 minutes
  • Cooking time: 10 - 15 minutes
  • Ingredients:

  • 2 lbs / 900g chicken breasts, cut into approx 1 inch cubes
  • 8 wooden skewers
  • Marinade:

  • 3 tablespoons olive oil
  • ¼ cup fresh lemon juice
  • 1 clove garlic, crushed
  • pinch dried oregano
  • salt and pepper to season
  • Mint Yogurt Raita:

  • 1 cup plain yogurt
  • 2 tablespoons fresh mint leaves, finely chopped
  • salt and pepper to season
  • Method:

    1. Divide the cubed chicken meat equally and thread onto the skewers.
    2. Mix all the marinade ingredients in a shallow dish (preferably with a lid). Place the skewers in the marinade and refrigerate for 6 hours.
    3. Right! How to grill chicken kebabs? Simple. Heat the grill to a high temperature - 400° F / 200° C. Place the kebabs on the grill. Cook for about 10 minutes, turning 2 or 3 times, so that they are browned all over. Be careful that they don't burn on one side. Check that that chicken is cooked through by cutting into one of the cubes - there should be no pink meat at all.
    4. Mix together the ingredients for the Mint Yogurt Raita in a small bowl.
    5. Serve the grilled kebabs with Pita Bread, Mint Yogurt Raita and a large salad.

Alternatively, the kebabs are ideal cooked over the coals or under the broiler - again, keep turning them to avoid burning them.

If you want a different marinade, use the one from Barbeque Chicken Recipe.
