Healthy Muffin Recipes

and Cupcake Recipes

If you have a few good, healthy muffin recipes in your repertoire you are away. A basic muffin recipe is easier to knock up than a cake, and muffins are more transportable making them ideal for outings, picnics and school lunchboxes. They are also versatile and can be made as fancy or as humble as you wish - from a simple recipe for bran muffins served with breakfast to a sophisticated Cappuccino Muffin. Generally, muffins are more robust than cupcakes and can consequently support ingredients such as fruit, nuts and chocolate chips. Cupcakes are lighter in texture and are usually iced with a frosting. Cupcakes were originally made in earthenware cups, before the days of metal muffin tins, hence the name "cup cake." (Wikipedia)

Again, according to Wikipedia, the "gourmet coffee" and conversely, the health food trend, saw the rise of the muffin in the 1970s and 1980s (no pun intended!). Whilst commercial muffins have morphed into giant-size portions, the quantities for the recipes below will usually yield 12 moderate sized muffins. It sometimes seems an anomaly to have "healthy" muffin recipes when we look at some of the ingredients, such as choc chips - but at least these ones are colorant-free, preservative-free and generally lower in fat. Plus, there is little to beat the aroma of homemade muffins. Enjoy these offerings.
