Ground Beef Goulash

This Ground Beef Goulash is quickly prepared and then bakes at a low temperature for about an hour and a half.

It is one of the easiest ground beef casserole recipes and produces a delicious, rich dish with minimal effort. Traditionally, a goulash is a kind of thin stew made with paprika. This Ground Beef Goulash is a nice twist on the original recipe and the paprika flavor is mild. Ideal if you are after meals on a budget.

  • Easy
  • Preparation time: 20 minutes
  • Cooking time: 1½ hours
  • Serves 4 - 6
  • Ingredients:

  • 2lb / 900g ground beef
  • 4 medium onions, diced
  • 1 red bell pepper, diced
  • 2 carrots diced - approx 7oz / 200g
  • 4 tomatoes, diced
  • 3 tablespoons tomato paste
  • 3 tablespoons ground paprika
  • 3 cups beef stock - made with a cube
  • It is worth using a casserole pot that can be used on the hob as well, in order to save on washing-up.

    Method:

    1. Preheat the oven to 325° F / 170° C.
    2. Brown the ground beef in 4 - 5 batches. If you attempt to brown it all at once, you will land up with a gray, watery mass. Keep aside.
    3. Brown the onions until they are a deep caramel color. This helps to give the dish flavor.
    4. Add the pepper and carrots and fry for about 3 minutes.
    5. Add the tomatoes, tomato paste and ground paprika. Add back the ground beef. Finally, add the stock - you may not need to add all of it now, depending on how "wet" your mixture is.
    6. Place a lid on the casserole dish. Bake for about 1½ hours, stirring every half an hour. Add more stock if necessary and scrape down the sides of the casserole dish.
    7. Serve with pasta and a big salad.
