Vegetable Kebabs
Grilling vegetables is one of the highlights of summer and vegetable kebabs have their special place on the grill. When tackling grilled vegetable recipes, it is pivotal that all the vegetables are "equal" in the sense that they will take roughly the same amount of time to cook. Choose your own seasonal vegetables, but be sure that they have a high moisture content so that they cook quickly. |
As a rule of thumb, vegetables that need to be BOILED will NOT work well on the grill: carrots and green beans WON'T work! It is also imperative that when grilling vegetables, they are cut into fairly equal chunks to allow for even cooking.
EasyPreparation time: 10 minutesCooking time: 10 - 12 minutesServes: 4 - 6Ingredients: 1 red bell pepper1 yellow bell pepper2 medium red onions1 - 2 small summer marrows3 - 4 zucchini (courgettes)12 cherry tomatoes (optional)12 button mushrooms (optional) 6 - 12 kebab sticksBasting Sauce: ¼ cup lemon juice¼ cup olive oil1 clove garlic1 teaspoon dried herbs1 teaspoon paprikaMethod: - Soak the wooden skewers in water for 10 - 30 minutes to stop them burning on the barbeque.
- De-seed the red and yellow bell peppers and cut into 2" / 5cm chunks.
- Peel the onions. Cut them in half and then each half into quarters. You will find that you can pull the layers into two parts. So, effectively, you have divided the onion into sixteenths! It is sometimes tricky not to split the onions when you pierce them so let common sense prevail.
- Slice the marrow and the zucchini into 2" / 5cm chunks.
- Thread the vegetable chunks onto the soaked skewers, alternating as you go. You can, if you like, use two skewers per kebab. This makes the kebabs a little more stable and slightly easier to turn.
- Mix together the basting sauce.
- Heat the grill so that it is medium high. (You can cook the kebabs over the coals as well, or even in a baking pan in a moderately hot oven). Pop the kebabs on the grill and baste them. Cook for about 5 minutes and then turn them. Keep basting them every time you turn them. Cook for another 2 minutes and turn. Repeat once or twice more until the vegetables are just cooked through. Watch them like a hawk to avoid burning them! The kebabs should be just tender and have brown tinges, but avoid charring them.
