Cucumber Salad Recipe
This Greek Salad Recipe is closer to the real thing than an "American Greek Salad" (?) which usually contains lettuce as well. You will notice that the dressing looks rather sparse but there is no need to drench this salad. The result is that you get to taste all the wonderful fresh ingredients. | Use the ripest, most flavorful tomatoes that you can get your hands on. On occasion I use tiny rosa tomatoes. The same goes for the cucumbers - if you can get those baby cucumbers, so much the better. This is one of the most versatile vegetable salad recipes, and will accompany fish, chicken or meat. |
EasyPreparation time: 10 minutesServes: 4 - 6Ingredients: 12oz / 350g cucumbers, cubed or sliced10oz / 300g ripe tomatoes, cubed or quartered7oz / 200g feta, cubed1 green bell pepper, diced½ red onion, slivered½ cup black olivesDressing: 2 tablespoons olive oil1 tablespoon red wine vinegar¼ teaspoon mixed herbsMethod: - In a salad bowl, mix together the cucumbers, tomatoes, feta, bell pepper, onion and olives.
- Mix together the dressing ingredients and pour over the salad.
