Garlic Chicken Pasta Recipe

This Garlic Chicken Pasta recipe is sheer simplicity and you can have a meal on the table in 15 minutes.

Healthy meal planning tip: this is one of those chicken pasta dishes where you can use your imagination. Slice a bell pepper or some carrots and stir-fry after you have browned the chicken. Add some asparagus. Use different pasta shapes or use linguine. Add a little cream if you want more sauce. Most of all, have fun!


The garlic is not terribly strong in this recipe. Add another clove if you want to rack up the intensity. Allow extra cooking time if you are using dry pasta.

  • Cooking time: 7 minutes for fresh pasta, 10 minutes for chicken

  • Ingredients:

  • 8oz / 250g fresh pasta
  • 1lb / 450g boneless skinless chicken breasts
  • 1 cup fresh basil leaves (1oz / 30g), finely chopped
  • 2 cloves garlic, crushed
  • 2 - 3 tablespoons lemon juice
  • oil for shallow frying
  • Method:

    1. Boil the pasta in plenty of salted water, according to the instructions on the packet. Fresh pasta cooks much more quickly than dry pasta - about 7 minutes. Drain.
    2. Heat a little oil in a pan. Slice the chicken breasts into slivers. Fry in 2 - 3 batches until they are golden brown.
    3. Add the basil leaves, garlic and lemon juice. Cook for a further 2 minutes.
    4. Stir the chicken through the pasta. Serve with a big green salad.
