Fresh Spinach Recipes

Spinach Salad Recipe

This is one of those fresh spinach recipes which allows you to ring the changes easily.

There is a bit of preparation which should be done ahead of time, but the salad can be quickly assembled at the last minute. If you are after summer dinner recipes, you can eat this as a main course and add thin slices of seared beef or lamb if you wish. Need low fat salad dressing? Use just the Dijon mustard, balsamic vinegar and 1 teaspoon oil.


  • Easy
  • Preparation time: 20 minutes
  • Cooking time: 40 minutes for beetroot, 5 minutes for peas, 2 minutes for almonds
  • Serves: 4 - 8 depending if you are eating this as a main or side dish
  • Ingredients:

  • 8oz / 250g baby spinach leaves
  • 6 medium beetroots
  • 4oz / 120g cherry or baby rosa tomatoes
  • 4oz / 120g feta cheese, cut into cubes
  • 4oz / 120g flaked almonds
  • 1 cup peas
  • ¼ English cucumber
  • Salad Dressing:

  • 1 teaspoon Dijon mustard
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons olive oil
  • Method:

    1. Heat the oven to 400° F / 200° C. Peel the beetroots and quarter them. Massage a little oil over them and place them on a roasting tray. Roast for about 30 - 40 minutes or until they are cooked through. Allow to cool.
    2. Wash and spin the spinach leaves. Sprinkle them into a large bowl or onto a platter.
    3. Heat a frying pan without oil in it. Add the flaked almonds. Toast them for 1 - 2 minutes until they are just brown. Be careful that they don't burn. Remove from the pan immediately and cool on a plate.
    4. Cook the peas. Drain and cool them.
    5. Peel and de-seed the cucumber. Dice it.
    6. Mix up the salad dressing ingredients and pour over the spinach leaves. Toss the leaves until they are well coated.
    7. Sprinkle over the beetroots, tomatoes, feta, peas and cucumber. Finally, sprinkle over the flaked almonds.

    Optional ideas for Spinach Salad:

  • Add 1 cup roasted butternut
  • Add toasted pecan or walnuts
  • Add thin slices of seared beef, lamb or smoked ham
