Fresh Salsa Recipe

Baked Fish Recipes

This Fresh Salsa recipe transforms oven baked fish. You can serve the fish as one whole fillet or you can cut it into portions.

  • Easy
  • Preparation time: 10 minutes
  • Cooking time: about 10 minutes
  • Serves: 4
  • Ingredients:

  • 1½ lbs / 700g fresh white fish
  • ½ teaspoon ground paprika
  • ¼ teaspoon mustard powder
  • ½ teaspoon lemon pepper
  • ¼ teaspoon salt
  • olive oil to brush over fish
  • 1 medium avocado pear,
  • 2oz / 60g stuffed olives, sliced
  • 2oz / 60g toasted almonds, quite finely chopped
  • 2oz / 60g feta cheese, diced
  • 4 tablespoons lemon juice
  • Method:

    1. Heat the grill to 400° F / 200° C.
    2. Mix together the paprika, mustard powder, lemon pepper and salt. Rub this mixture into the fish. Brush a baking tray with oil and place the fish on it. Brush the top of the fish with olive oil.
    3. Place the fish under the grill and cook for about 7 - 10 minutes depending on the thickness of the fish. It should be just cooked when it is ready - ie not translucent. Avoid overcooking and drying out the fish.
    4. Avocado Salsa

    5. Peel the avocado pear and remove the pip. Dice into ½ inch cubes.
    6. Add the olives, almonds and feta to the avocado pear. Drizzle over the lemon juice.
    7. Heap the Avocado Salsa on top of the oven baked fish. Serve with a salad and sauteed potatoes.
