Baked Fish Recipes
This Fresh Salsa recipe transforms oven baked fish. You can serve the fish as one whole fillet or you can cut it into portions.
EasyPreparation time: 10 minutesCooking time: about 10 minutesServes: 4Ingredients: 1½ lbs / 700g fresh white fish½ teaspoon ground paprika¼ teaspoon mustard powder½ teaspoon lemon pepper¼ teaspoon saltolive oil to brush over fish1 medium avocado pear, 2oz / 60g stuffed olives, sliced2oz / 60g toasted almonds, quite finely chopped 2oz / 60g feta cheese, diced4 tablespoons lemon juiceMethod: - Heat the grill to 400° F / 200° C.
- Mix together the paprika, mustard powder, lemon pepper and salt. Rub this mixture into the fish. Brush a baking tray with oil and place the fish on it. Brush the top of the fish with olive oil.
- Place the fish under the grill and cook for about 7 - 10 minutes depending on the thickness of the fish. It should be just cooked when it is ready - ie not translucent. Avoid overcooking and drying out the fish.
Avocado Salsa - Peel the avocado pear and remove the pip. Dice into ½ inch cubes.
- Add the olives, almonds and feta to the avocado pear. Drizzle over the lemon juice.
- Heap the Avocado Salsa on top of the oven baked fish. Serve with a salad and sauteed potatoes.
