Easy Chocolate Chip Cookie Recipe

Treat yourself with this easy Chocolate Chip Cookie Recipe.

This is great if you are after healthy chocolate chip cookie recipes, free of all the nasties that appear in commercial cookies. Below, there is a variation on the usual choc chip cookie recipe by way of an Oatmeal Chocolate Chip Cookie.


  • Easy
  • Preparation time: 15 minutes
  • Cooking time: about 15 minutes
  • Makes about 30 cookies
  • You will need baking trays and cooking spray or butter to grease them lightly.

    Ingredients:

  • 4oz / 120g butter, slightly softened
  • 1 cup pale brown sugar
  • ½ teaspoon vanilla essence
  • 1 egg
  • 1¾ cups flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup choc chips (4oz / 120g)
  • ½ cup pecan nuts (2oz / 60g)
  • Method:

    1. Heat the oven to 350° F / 180° C.
    2. Cream together the butter and brown sugar until the mixture is thick and pale. Add the vanilla essence and the egg. Continue to cream.
    3. Mix together the flour, baking powder and salt. Add to the butter mixture. Mix until you have a soft dough.
    4. Add the choc chips and the nuts. Knead these into the dough gently.
    5. Roll balls of dough just bigger than the size of a walnut. Place on a greased baking sheet.
    6. Cook for about 12 - 15 minutes, until the cookies are slightly brown. They shouldn't "sizzle" when they are properly cooked. They will still be a little soft but will harden as they cool. Cool on wire racks.
