Easy Chocolate Cake Recipe
This is an easy Chocolate Cake recipe which has a light texture. | The chocolate frosting recipe can be varied - substitute a teaspoon of instant coffee with a tablespoon of hot water instead of the vanilla. Serve this chocolate sponge cake recipe as one of your easy desserts alongside strawberries and cream. We use this as one of our Easter desserts and decorate it with candied eggs. |
EasyPreparation time: 15 minutesCooking time: 30 - 40 minutesServes: 10 slicesIngredients: 2⁄3 cup castor sugar (6oz / 170g)3 eggs, separated6oz / 170g butter½ cup milk1 teaspoon vanilla essence2 cups flour¼ cup cocoa2½ teaspoons baking powder½ teaspoon ground cinnamonChocolate Frosting: 12 oz / 340g icing sugar (about 3 cups)6oz / 170g butter¼ cup cocoa1 teaspoon vanilla essence2 - 3 tablespoons hot waterYou will need an 8" / 21 cm springform cake tin or similar. Method: - Line the base of the springform cake tin with baking paper. This is easily done if you tear a piece of baking parchment just larger than the base of the tin. Place it over the base and then place the circular side part in place. Click the side part closed, catching the paper as you do so. Grease the cake tin or spray with baking spray.
- Heat the oven to 400° F / 200° C.
- Beat together the egg yolks and sugar until mixture is pale and thick.
- Add the butter to the milk and heat in the microwave until hot.
- Sift together the flour, baking powder, cocoa and cinnamon.
- Add the milk and flour mixtures to the beaten eggs. Alternate between the two mixtures and keep beating with each addition.
- Beat the egg whites until they hold a stiff peak. Avoid over-beating. Fold into the cake batter. Pour the batter into the prepared tin.
- Bake for 30 - 40 minutes, or until a skewer inserted into the middle of the cake comes out just clean. Remove from the oven and allow to cool slightly before removing the springform side. Turn out onto a wire rack and carefully remove the base. Cool completely before icing.
- When the cake is cool, split it carefully in two, using a bread knife.
- Spread half the Chocolate icing on the one layer. Place the other layer on top and then spread the remaining icing on top of the cake. You could serve this easy Chocolate Cake recipe as a dessert with whipped cream.
Chocolate Frosting recipe Mix together the butter, icing sugar, cocoa and vanilla essence. Add 2 - 3 tablespoons hot water until you have a spreadable consistency.
