Easy Chili Recipe

This easy Chili recipe is surprisingly quick to assemble. It then bakes for a long time at a low heat. This, to my mind, is clever cooking - for the small investment of time in preparation, you then end up with one of those easy casserole recipes which cooks by itself with minimal further effort on your part. So, don't be put off by the long cooking time! This is also a great recipe to use when entertaining - all the trimmings are fun and this is a very "patient" dish - it doesn't mind waiting until you are ready to serve.

This is a take on a Chili con Carne recipe - instead of using ground beef, beef shin is used but any cheap cut can be used. The amount of chili caters to our family - rack up the heat if you wish!   • Easy
  • Preparation time: 15 minutes
  • Cooking time: about 3 hours
  • Serves: 6 - 8 or makes 2 meals for 4 people each (eat one now and freeze the other)
  • Ingredients:

  • 2 lbs / 900g beef shin (bone-in), cut into chunks
  • 2 large onions, chopped
  • 1 large clove garlic, crushed
  • 2 small chilis, chopped (including seeds)
  • ½ teaspoon chili powder
  • 1 cup tomato paste (not ketchup)
  • 4 ripe tomatoes, chopped
  • 3 tablespoons flour
  • 1½ - 2 cups beef stock
  • 1 cup fresh coriander, chopped
  • 2 large red bell peppers,de-seeded and chopped
  • 1 can red or brown beans
  • a little oil for shallow frying
  • You will need a casserole dish with a lid. It is worth using one that can be used on the hob as well to save on washing-up.

    Beef shin will usually include a piece of bone with marrow in it. Include this in your cooking as it yields a fabulous juice. You can discard the bones as you serve, but make sure that you scrape the cooked marrow into the sauce.

    Method:

    1. Heat the oven to 325° F / 160° C.
    2. Heat the oil in the casserole pan. Brown the onions until they are translucent and have turned a caramel color. This will give the dish flavor. Add the cubed meat in one go. Your heat should be high so that your meat browns. If the heat is too low the meat will just stew in its juices. Turn the meat and the onions until the meat has been sealed and slightly browned.
    3. Add the garlic, chilis, chili powder, tomatoes and tomato paste.
    4. Add the flour and stir into the mixture. Gradually add the beef stock, stirring all the time to avoid lumps forming.
    5. Add the fresh coriander. Cover the casserole pan and place it in the oven. Bake for about ½ hour.
    6. Add the chopped peppers. Bake for a further 2 hours on a very low heat - about 300° F / 150° C.
    7. Add the can of beans. Cook for another 20 minutes.
    8. Serve this easy Chili recipe with rice, tacos or nachos, guacamole and sour cream.
