Easy Chicken Pasta Recipe
with Homemade BBQ Sauce Recipe
This Easy Chicken Pasta Recipe is the ideal way of using leftover Barbeque Chicken Recipe. If, however, you are making this from scratch, you will find that it is the easiest of chicken pasta dishes.
EasyPreparation time: 15 minutesCooking time: 20 minutesServes 4 - 6Ingredients: 1lb / 450g boneless skinless chicken breasts1 medium onion, finely diced2 cloves garlic, crushed1 cup tomato ketchup2 tablespoons tomato paste2 tablespoons cider vinegar1 tablespoon Worcestershire sauce1 teaspoon dry (English) mustard1 teaspoon cayenne pepper1 teaspoon paprika½ cup water - if necessaryoil for shallow frying8oz / 250g dried pasta shapes - farfalle or penne are good choicesMethod: - Cut the chicken breasts into long slivers, about the size of your baby finger. Set aside.
- Bring a pot of salted water to the boil. Add the pasta and cook until it is 'al dente.' Drain and set aside.
- In a large frying pan or skillet, fry the onion in a little oil until it is soft and slightly brown.
- Add the garlic and fry for another minute.
- Add the remaining ingredients, except the water. Cook for about 10 minutes.
- Add the chicken slivers to the sauce. Add water if the sauce is too dry.
- Cook for about 5 - 7 minutes until the chicken is cooked through.
- Add the pasta and cook for a minute so that all the pasta shapes are completely coated in the sauce. Serve with a large salad.
