Easy Chicken Pasta Recipe

with Homemade BBQ Sauce Recipe

This Easy Chicken Pasta Recipe is the ideal way of using leftover Barbeque Chicken Recipe. If, however, you are making this from scratch, you will find that it is the easiest of chicken pasta dishes.

  • Easy
  • Preparation time: 15 minutes
  • Cooking time: 20 minutes
  • Serves 4 - 6
  • Ingredients:

  • 1lb / 450g boneless skinless chicken breasts
  • 1 medium onion, finely diced
  • 2 cloves garlic, crushed
  • 1 cup tomato ketchup
  • 2 tablespoons tomato paste
  • 2 tablespoons cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dry (English) mustard
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • ½ cup water - if necessary
  • oil for shallow frying
  • 8oz / 250g dried pasta shapes - farfalle or penne are good choices
  • Method:

    1. Cut the chicken breasts into long slivers, about the size of your baby finger. Set aside.
    2. Bring a pot of salted water to the boil. Add the pasta and cook until it is 'al dente.' Drain and set aside.
    3. In a large frying pan or skillet, fry the onion in a little oil until it is soft and slightly brown.
    4. Add the garlic and fry for another minute.
    5. Add the remaining ingredients, except the water. Cook for about 10 minutes.
    6. Add the chicken slivers to the sauce. Add water if the sauce is too dry.
    7. Cook for about 5 - 7 minutes until the chicken is cooked through.
    8. Add the pasta and cook for a minute so that all the pasta shapes are completely coated in the sauce. Serve with a large salad.
