Easy Chicken Parmesan Recipes

This is one of those easy Chicken Parmesan Recipes. Chicken Parmesan tends to be a bit fiddly but if you plan well, this family favorite is quick to put together. The dish looks glamorous when it comes to the table, with its cheesy top sizzling, and the easy tomato sauce dresses up the boneless, skinless chicken breast.

Serve this dish as a mid-week family meal, or to friends at a casual dinner party - either way it is a winner. This dish can either be served in one large baking dish or in small, individual oven-proof dishes.

The key to this easy Chicken Parmesan Recipe is to make the Tomato Sauce Recipe in advance.


  • Easy (a little effort if you still need to make the Tomato Sauce)
  • Serves 4 - 6
  • Preparation time: 15 - 20 minutes minutes
  • Cooking time: 20 - 30 minutes

  • You will need a frying pan and an ovenproof baking dish, large enough to take the chicken breasts in one layer.

    Ingredients:

  • 1lb 10oz / 750g boneless chicken breasts
  • oil for shallow frying
  • 1 egg
  • 1 quantity Tomato Sauce Recipe
  • ¾ cup fine breadcrumbs
  • 8oz / 250g Mozzarella cheese, grated
  • 3oz / 100g Parmesan, very finely grated
  • Method:

    1. Preheat oven to 350° F / 180° C.
    2. Beat the egg lightly in a shallow bowl.
    3. Place the breadcrumbs in another shallow bowl.
    4. Heat the oil gently in a large frying pan.
    5. One by one, coat each chicken fillet, first with egg, then with breadcrumbs. Fry gently until golden on both sides. The chicken needn't be cooked all the way through as it gets cooked further in the oven. Avoid over-heating the oil as your breadcrumbs will burn. Should this happen, just wipe the pan out with paper towel, add fresh oil and continue frying the remaining chicken breasts.
    6. Spoon half of the Easy Tomato Sauce into the baking dish.
    7. Transfer the chicken breasts onto the tomato sauce, arranging them in one layer.
    8. Smother the breasts with the remaining tomato sauce.
    9. Top the dish with the Mozzarella and Parmesan cheeses.
    10. Bake for 15 - 20 minutes, until the cheese is bubbly and golden.
    11. Serve with rice or pasta and a large salad.
    12. Delicious!
