Easy Chicken Curry Recipe

This Easy Chicken Curry Recipe is the easiest of quick shredded chicken recipes.

  • Serves 4 - 6
  • Ingredients:

  • 1 whole cooked chicken
  • 1 can coconut milk
  • 2 - 3 tablespoons red curry paste
  • 1 fresh stalk lemon grass, cut very finely
  • ½ cup raisins
  • 1 cup loosely packed coriander leaves
  • Method:

    1. Carve the chicken off the bone. Shred or sliver the slices.
    2. Add the coconut milk to a pan over a medium heat. Add the finely chopped lemon grass and red curry paste.
    3. Add the raisins and coriander leaves.
    4. Add the chicken. Simmer until the chicken has heated through and the raisins and lemon grass have softened. Allow the coconut milk to reduce so that it is has a thick consistency - about 5 minutes.
    5. Serve with rice and green vegetables or a salad.
