Easy Chicken Curry Recipe
This Easy Chicken Curry Recipe is ideal for using chicken leftovers from Rotisserie Chicken Rub Recipe with Oven Baked Whole Chicken, Oven Baked Whole Chicken with BBQ Rub or Oven Baked Whole Chicken with Garlic, Orange and Rosemary Rub. With this easiest of quick shredded chicken recipes, you can have a meal on the table in under half an hour.
EasyPreparation time: 10 minutesCooking time: 10 minutesServes 4 - 6Ingredients: 1 whole cooked chicken 1 can coconut milk2 - 3 tablespoons red curry paste1 fresh stalk lemon grass, cut very finely½ cup raisins1 cup loosely packed coriander leavesMethod: - Carve the chicken off the bone. Shred or sliver the slices.
- Add the coconut milk to a pan over a medium heat. Add the finely chopped lemon grass and red curry paste.
- Add the raisins and coriander leaves.
- Add the chicken. Simmer until the chicken has heated through and the raisins and lemon grass have softened. Allow the coconut milk to reduce so that it is has a thick consistency - about 5 minutes.
- Serve with rice and green vegetables or a salad.
