Chocolate Strawberries

Strawberry Dessert Recipes

Chocolate Strawberries have to be the easiest of strawberry dessert recipes!

This is one of the best Valentines Gifts - can you imagine homemade chocolate strawberries delivered to your loved one? What fun! They are also great if you are after cold picnic food recipes - just pack them carefully into a suitable container with some greaseproof paper around them to stop them getting crushed.

They could also just scrape in if you are after healthy snack recipes for kids to pick on! It is critical that you use strawberries that are ripe. You can make this recipe a day in advance, but then you need to be sure that the strawberries are going to "last" that extra day and not become overripe.

  • Easy
  • Preparation time: 10 minutes
  • Cooking time: under 5 minutes
  • Serves: 6 - 8
  • Ingredients:

  • 8oz / 250g dark or milk chocolate
  • 1 lb / 450g ripe strawberries, with hulls intact
  • Method:

    1. Line a tray with waxed greaseproof paper.
    2. The trick with this recipe is melting the chocolate. Microwave method: break the chocolate up and put it in a bowl. Microwave gently for about a minute. Check to see whether it has melted. Microwave for a further half minute to minute, until it has just melted. Avoid overheating the chocolate. It will become crumbly and is then impossible to work with.
    3. Stove top method: break the chocolate up and place it in a bowl. Pour some boiling water into a small saucepan and sit the bowl over the pan. The water in the pan should just touch the bottom of the bowl. Melt the chocolate. Remove it from the heat as soon as it has melted. If the chocolate overheats, it becomes crumbly and is irredeemable!
    4. Work quickly now. Hold a strawberry by its hull or stalk and dip it into the chocolate. Twirl it round and then stand it up in the air to let the excess chocolate run down the strawberry slightly. Place it on the greaseproof paper. Repeat the process with the remaining strawberries. You may need to melt the chocolate again if it gets too stiff to produce a thin, smooth coating.
    5. Once the chocolate has set, place the tray of strawberries in the fridge until you are ready to serve them. Cover them loosely with another sheet of greaseproof paper. I find that the strawberries "sweat" if I keep them in a sealed container in the fridge. Be sure not to place the strawberries near the back of the fridge where they may "burn".
