Chocolate Cupcake Recipe

This Chocolate Cupcake recipe has to be the best cupcake recipe.

It is fudgy and chocolaty, however it is fairly economical as it uses cocoa and not chocolate. It is one of those cupcake recipes which will keep for a few days. You can ring the changes regarding the cupcake icing recipes and decorations.

  • Makes about 20 cupcakes

    Ingredients:

  • 12oz / 350g butter
  • 12oz / 350g pale brown sugar
  • 2 jumbo eggs
  • 8oz / 225g flour
  • 2 teaspoons baking powder
  • ½ cup cocoa
  • ¾ cup milk
  • Chocolate Icing recipe

  • 12 oz / 340g icing sugar (about 3 cups)
  • 6oz / 170g butter
  • ¼ cup cocoa
  • 1 teaspoon vanilla essence
  • 2 - 3 tablespoons hot water
  • To decorate:

  • about 36 small candied eggs
  • You will need 2 muffin trays and paper muffin cups.

    Method:

    1. Preheat the oven to 400° F / 200° C.
    2. Place paper cups in the muffin tray holes.
    3. Cream the butter and sugar until the mixture is thick and pale.
    4. Add the eggs and continue mixing.
    5. Sift together the flour, baking powder and cocoa.
    6. Alternating, fold the flour mixture and the milk into the butter mixture. The mixture should be a fairly thick dropping consistency.
    7. Fill the cupcake papers two thirds full. Bake for about 15 - 20 minutes, until a skewer inserted into the middle of a cupcake comes out just clean.
    8. Place the cupcakes on wire racks to cool. When completely cold, place the icing in an icing bag and decorate the cupcakes in swirls that resemble a nest. Decorate with colored eggs. Alternatively, you can use a palette knife or similar and just smooth the frosting onto the cupcakes and decorate with eggs (the easier option!)

  • Mix together the butter, icing sugar, cocoa and vanilla essence. Add 2 - 3 tablespoons hot water until you have a spreadable consistency.
