Chocolate Chip Muffin Recipes

Cappuccino Style

We've tried many Chocolate Chip Muffin Recipes, however, these Cappuccino Muffins are a great variation. This is a quick, easy recipe which works well if you have friends popping in for coffee. They are also a hit in lunchboxes.

Along with our Lemon Poppy Seed Muffin recipe and Healthy Blueberry Muffins, these are ideal if you are after healthy snacks for kids. They are preservative and colorant-free and the buttermilk keeps them fresh in a lunch box. Remember these if you are picnic catering and more especially, brunch catering. The dash of coffee gives them a slightly sophisticated edge.


Ingredients:

  • 2½ cups flour
  • 2½ teaspoons baking powder
  • 4oz / 120g butter, melted and cooled
  • ¼ cup brown sugar
  • 4 tablespoons golden syrup
  • 2 eggs lightly beaten
  • 1 cup buttermilk
  • 3 teaspoons good quality instant coffee
  • 1 cup dark choc chips
  • Optional frosting:

  • 1½ cups icing sugar
  • 1 teaspoon soft butter
  • 2 tablespoons milk
  • 1 teaspoon good quality instant coffee

  • Method:

  • Heat the oven to 350° F / 180° C.
  • Place greased muffin papers in a 12-hole muffin tray.
  • Combine all the muffin ingredients in a bowl. Mix gently but don't over-beat as this will produce a heavy muffin.
  • Divide the mixture between the muffin papers. Bake for about 20 minutes. They are ready when a skewer inserted into the center of a muffin comes out just clean.
  • Cool the muffins on a wire rack.
  • For the optional frosting: dissolve 1 teaspoon of instant coffee in 2 teaspoons of boiling water. Then combine the frosting ingredients in a small pan and heat until just under the boil.
  • Pour the frosting over the muffins and allow to cool.
  • Chocolate Chip Muffin recipe variations:

  • Add ½ cup chopped pecan nuts
  • Add ½ cup raisins and decrease the chop chips by ½ cup
  • Add 4 tablespoons honey instead of golden syrup
