Chili con Carne Recipe

This Chili con Carne Recipe (literally "chili pepper with meat") is one of the best ground beef recipes. This particular recipe is mild, but you can rack up the spice to your liking. This is one of those simple ground beef recipes which is so versatile - serve it with rice, tortillas, nachos, with or without accompaniments and it can reappear as Ground Beef Taco Recipe. This is also a great recipe for informal entertaining.

  • Preparation time: 15 minutes
  • Cooking time: about 2 hours
  • Makes 2 meals, each feeding 4 - 6 people
  • Ingredients:

  • 3lbs 3oz / 1½ kg ground beef
  • 2 large onions, quite finely chopped
  • 2 cloves garlic
  • ½ teaspoon chili powder
  • 5oz / 140g tomato paste
  • ½ cup tomato sauce
  • 2 - 3 cups beef stock
  • 2 cans red kidney beans, drained
  • 2 large red peppers, sliced quite finely
  • 1 cup fresh coriander, chopped
  • You will need a casserole dish with a lid. It is worth using one that can be used on the hob as well to save on washing-up.

    Method:

    1. Preheat the oven to 350° F / 180° C.
    2. Brown the ground beef in 4 - 5 batches. If you attempt to brown it all at once, you will land up with a gray, watery mass. Keep on one side.
    3. Brown the onions until they are a deep caramel color. This helps to give the dish flavor.
    4. Add the garlic to the onions. Add chili powder, tomato paste and tomato sauce.
    5. Add the ground beef back to onion mixture. Add about 2 cups beef stock to the mixture. Put the lid on the casserole dish and bake for about 1 hour.
    6. Add the drained red kidney beans, the sliced red peppers and fresh coriander.
    7. Bake for 1 more hour, until the ground beef is soft and the sauce is rich. Check the dish every ½ hour and add the extra beef stock as necessary.
    8. I like to serve this Chili con Carne recipe with rice.

    Accompaniments:

  • Guacamole
  • Salsa
  • Sour Cream
  • Shredded ice-berg lettuce
  • You could also add grated cheese, but it isn't really necessary.
