EasyPreparation time: 5 minutesServes: 4This Chicken Salad Sandwich recipe makes good use of leftover chicken from Oven Baked Whole Chicken, Rotisserie Chicken Rub Recipe or Roast Chicken with Garlic, Orange and Rosemary Rub. Ingredients: 4 cups shredded cooked chicken1 cup Salsa Recipe1 cup Cheddar Cheese, grated½ red bell pepper, dicedmixed salad leaves or baby spinach leaves4 - 6 soft tortilla wraps (depending on size)Method: - Divide the Salsa Recipe between the wraps. Spread it almost to the edge of each wrap.
- Scatter over the chicken, allowing about a cup of chicken per wrap. Scatter over about ¼ cup cheese per wrap. Then sprinkle over the red bell pepper and mixed salad leaves. Roll the wraps fairly tightly.
- Roll the chicken wraps in greaseproof paper and "tweak" the ends to secure them.
