Chicken Salad Sandwich Recipe

On days when our kids get this Chicken Salad Sandwich recipe in their lunch boxes, they come home saying, "You should have seen the other kids' eyes! They were green with envy!"

It really isn't difficult producing healthy school lunch recipes and the little time invested in preparing them is well worth it. This is one of those quick shredded chicken recipes which is ideal if you are after brown bag lunch recipes. You can ring the changes with this recipe. Use mayonnaise instead of salsa.


Add bacon or ham. Use tomatoes instead of peppers. Be creative. Better still, get the kids involved in the production line!

  • This Chicken Salad Sandwich recipe makes good use of leftover chicken from Oven Baked Whole Chicken, Rotisserie Chicken Rub Recipe or Roast Chicken with Garlic, Orange and Rosemary Rub.

    Ingredients:

  • 4 cups shredded cooked chicken
  • 1 cup Salsa Recipe
  • 1 cup Cheddar Cheese, grated
  • ½ red bell pepper, diced
  • mixed salad leaves or baby spinach leaves
  • 4 - 6 soft tortilla wraps (depending on size)
  • Method:

    1. Divide the Salsa Recipe between the wraps. Spread it almost to the edge of each wrap.
    2. Scatter over the chicken, allowing about a cup of chicken per wrap. Scatter over about ¼ cup cheese per wrap. Then sprinkle over the red bell pepper and mixed salad leaves. Roll the wraps fairly tightly.
    3. Roll the chicken wraps in greaseproof paper and "tweak" the ends to secure them.
