Chicken Pasta Recipe

This Chicken Pasta recipe is a speedy standby and ideal as part of your healthy diet plan. It is perfect if you are after chicken leftover recipes.

    Ingredients:

  • 8oz / 250g fresh pasta
  • 2 - 3 cups cooked shredded roast chicken
  • ½ cup Pesto Sauce Recipe
  • 4oz / 120g mixed salad leaves (rocket, baby spinach, watercress)
  • 4oz / 120g cherry tomatoes
  • Method:

    1. Boil the pasta in plenty of salted water, according to the instructions on the packet. Fresh pasta cooks much more quickly than dry pasta - about 7 minutes.
    2. Toss together the shredded chicken, pesto sauce and the cooked pasta.
    3. Stir the salad leaves and tomatoes through the pasta mixture. The leaves will wilt slightly. Serve warm.
