Ingredients: 2lbs / 900g chicken pieces½ cup flour2 medium onions, sliced into fine rings1 clove garlic, crushed1 red bell pepper, de-seeded and finely sliced1 yellow bell pepper, de-seeded and finely sliced4 rashers lean bacon, diced1lb / 450g tomatoes, chopped (about 4)2 tablespoons tomato paste½ cup chicken stock½ cup dry white wine4 carrots, cut into rings4oz / 120g black olives1 cup parsley, choppeda little oil for shallow fryingYou will need a casserole dish with a lid. It is worth using one that can be used on the hob as well to save on washing-up. Method: - Heat the oven to 350° F / 180° C.
- Dust the chicken pieces with flour. Heat a little oil in a casserole pan or frying pan. Add the chicken pieces and brown them all over. Drain on absorbent paper. You may have to wipe out the pan before continuing.
- Add a little more oil to the pan. Gently fry the onion rings until they are soft and translucent. Add the garlic, red and yellow bell peppers and bacon. Continue frying for about 2 minutes, until the peppers just begin to soften.
- Add the tomatoes, tomato paste, chicken stock and white wine. Cook for a further 2 minutes. Add the olives and parsley.
- Add the chicken pieces back to the mixture. Put a lid on the casserole dish and bake for about 40 minutes. Trick if you find that the gravy is too runny: melt a tablespoon of butter in the microwave. Add 1 - 2 tablespoons of flour and stir until you have a paste. Microwave for about 30 seconds. Now stir this paste into the gravy, making sure that there are no lumps. Return the casserole to the oven to allow the sauce to thicken.
