Chicken Cacciatore Recipe

This Chicken Cacciatore Recipe is delectable! It is one of those hearty Italian chicken recipes which is both nutritious and satisfying.

"Cacciatore" means "hunter-style" and the beauty of this recipe is that you can vary the vegetables according to what you have in season: add mushrooms, tinned tomatoes or even red wine. This recipe for chicken casserole is ideal if you are after make-ahead meals. It will also freeze well.

    Ingredients:

  • 2lbs / 900g chicken pieces
  • ½ cup flour
  • 2 medium onions, sliced into fine rings
  • 1 clove garlic, crushed
  • 1 red bell pepper, de-seeded and finely sliced
  • 1 yellow bell pepper, de-seeded and finely sliced
  • 4 rashers lean bacon, diced
  • 1lb / 450g tomatoes, chopped (about 4)
  • 2 tablespoons tomato paste
  • ½ cup chicken stock
  • ½ cup dry white wine
  • 4 carrots, cut into rings
  • 4oz / 120g black olives
  • 1 cup parsley, chopped
  • a little oil for shallow frying
  • You will need a casserole dish with a lid. It is worth using one that can be used on the hob as well to save on washing-up.

    Method:

    1. Heat the oven to 350° F / 180° C.
    2. Dust the chicken pieces with flour. Heat a little oil in a casserole pan or frying pan. Add the chicken pieces and brown them all over. Drain on absorbent paper. You may have to wipe out the pan before continuing.
    3. Add a little more oil to the pan. Gently fry the onion rings until they are soft and translucent. Add the garlic, red and yellow bell peppers and bacon. Continue frying for about 2 minutes, until the peppers just begin to soften.
    4. Add the tomatoes, tomato paste, chicken stock and white wine. Cook for a further 2 minutes. Add the olives and parsley.
    5. Add the chicken pieces back to the mixture. Put a lid on the casserole dish and bake for about 40 minutes. Trick if you find that the gravy is too runny: melt a tablespoon of butter in the microwave. Add 1 - 2 tablespoons of flour and stir until you have a paste. Microwave for about 30 seconds. Now stir this paste into the gravy, making sure that there are no lumps. Return the casserole to the oven to allow the sauce to thicken.
    6. You need simple side dishes with this Chicken Cacciatore Recipe: rice and fine green beans will do the trick.
