Canned Peach Cobbler Recipe
This Canned Peach Cobbler recipe can be made all year round. It has a biscuit (scone) dough topping, drizzled with sugar for extra crunch. | For a Fresh Peach Cobbler recipe, substitute yellow cling peaches or nectarines. Lots of cobblers require you to roll out the dough or cut out shapes. I have produced a really easy peach cobbler recipe whereby you shape the dough in your hands. The result still looks good and more important, tastes fabulous. |
EasyPreparation time: 10 - 15 minutesCooking time: 25 minutesServes: 6Ingredients: 4 cups peaches, drained and sliced (3 cans)½ teaspoon cinnamonBiscuit (Scone) Topping: 2 cups flour2 teaspoons baking powder½ teaspoon cinnamon3 oz / 90g butter¼ cup sugar1 cup buttermilk1 tablespoon orange rind2 tablespoons sugar,extraYou will need a 2½" / 5cm greased deep oven-proof dish. Method: - Heat the oven to 400° F / 200° C.
- Scatter the sliced fruit over the base of the oven-proof dish. Sprinkle over ½ teaspoon cinnamon. If you are using fresh peaches, you may like to scatter a few tablespoons of sugar over the fruit.
- Mix the baking powder and cinnamon into the flour. Rub in the butter. Add the sugar and orange rind. Add the buttermilk and mix lightly until you have a soft dough-like consistency.
- Take small handfuls of dough. Pat the ball of dough lightly to flatten it slightly. Place on top of the peaches. Repeat until you have used up all of the biscuit dough and you have covered the peaches. Don't worry too much if there are small gaps: the dough rises and expands. Sprinkle over the 2 extra tablespoons of sugar.
- Bake for about 20 minutes, until the dough has cooked through and has browned and become crispy on the top.
- Serve this Canned Peach Cobbler recipe straight from the oven with thick cream.
