Best Potato Salad Recipe

This is the best Potato Salad recipe if you are looking for alternatives to classic potato salad recipes.

The potatoes are not drenched in mayonnaise and the recipe is both lighter and more interesting, featuring one of our low fat salad dressing recipes. It is ideal if you are looking for cold picnic food recipes. Meal planning tip: use leftover boiled potatoes for this Best Potato Salad Recipe - they won't absorb as much dressing if they are cold.


  • Easy
  • Preparation time: 10 minutes
  • Cooking time: 20 - 25 minutes
  • Serves 8
  • Ingredients:

  • 2lbs / 900g potatoes, peeled
  • ¼ cup olive oil
  • 2 tablespoons cider or vinegar (you can use the juice from the gherkins if it is tasty)
  • 1 teaspoon Dijon mustard
  • 6oz / 180g pickled gherkins
  • ½ cup spring onions, finely chopped (optional)
  • 4oz / 120g chopped pecans (optional)
  • Method:

    1. Cut the potatoes into half and bring them to the boil in a pot of salted water. Cook until they are tender but not soft or mushy.
    2. Whilst the potatoes are cooking, mix together the olive oil, vinegar and mustard.
    3. Chop the gherkins, onions and pecans.
    4. Drain the potatoes, making sure that you discard all the water. Quickly slice or chop the potatoes as best you can whilst they are still hot.
    5. Whilst the potatoes are still very hot, add the dressing, then the gherkins, spring onions and nuts. Allow to cool. You will find that the potatoes will absorb the dressing.
