Best Fruit Cake Recipe

This has to be the Best Fruit Cake recipe and it is so easy to make. The original fruit cake recipe was given to me by my mother-in-law some 25 years ago. As with all tried and tested recipes, it has evolved. This is one of the best cake recipes if you are looking for picnic ideas and recipes as it is easily transported and sliced. It is just as good served with tea or coffee, or as a snack in a lunch box. It is a really versatile cake.

This Best Fruit Cake recipe is light. Fruit Cake Recipe offers a richer, denser cake.

By "mixed cake fruit" I mean a mixture of raisins, sultanas, currants and mixed peel. This can be bought ready mixed, or you can make up your own mixture.

  • Easy
  • Preparation time: 10 minutes
  • Cooking time: 40 minutes
  • Makes 1 loaf
  • Ingredients:

  • 4oz / 120g butter
  • ¾ cup pale brown sugar
  • 2 eggs
  • 13 cup milk
  • 1½ cup mixed cake fruit
  • 2 tablespoons orange zest (use an unwaxed orange)
  • 1½ cups flour (8oz / 230g)
  • 2 teaspoons baking powder
  • You will need a loaf tin and baking paper.

    Method:

    1. Heat the oven to 350° F / 180° C.
    2. Line the loaf tin with baking paper and spray with cooking spray if necessary.
    3. Cream together the butter and sugar until they are thick and pale. Add the eggs and continue to beat. Add the milk.
    4. Fold in the cake fruit and the orange zest.
    5. Mix together the flour and baking powder. Fold this into the batter. The mixture will be fairly stiff. Pile the mixture into the prepared loaf tin and smooth the top slightly.
    6. Bake for about 40 minutes, until the top is golden. A skewer inserted into the middle of the cake should come out just clean.
    7. Tip the cake out carefully onto a wire wrack and remove the baking paper. Cool. This cake is very friable when freshly baked but it is easier to cut when it is cold. If you intend to transport this cake, wrap it in foil or pack it into a sealed container.
