Best Chicken Salad Sandwich

This has to be the best Chicken Salad Sandwich! It is one of those quick shredded chicken recipes which makes good use of chicken leftovers. It is ideal if you are after picnic recipes or needing lunch box ideas. We also enjoy these as a quick lunch.

You can use white bread, wholewheat bread or fancy loaves.

  • Easy
  • Preparation time: 10 minutes
  • Cooking time: 20 minutes
  • Makes 8 sandwiches
  • Ingredients:

  • 2 cups cooked shredded chicken
  • 8oz / 250g rindless back bacon
  • 2 - 3 ripe tomatoes, very thinly sliced
  • 1 head of lettuce (baby gem, butter lettuce or cos)
  • ¼ cup mayonnaise
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon paprika
  • 16 slices of bread
  • Method:

    1. Heat the oven to 350° F / 180° C.
    2. Place the bacon on a oiled baking tray. Bake for about 10 minutes. Turn the slices over and bake for a further 10 minutes or until the bacon is browned and slightly crispy.
    3. Mix together the mayonnaise, mustard and paprika. Spread thinly over the sliced bread.
    4. Work with 8 slices of bread: place a couple of slices of tomato on each slice. Next put a piece of bacon, then a thin layer of shredded chicken and last of all, a piece of lettuce. Place the remaining 8 slices of bread on top of these slices. Slice in half or into quarters.
    5. If you are not eating these sandwiches immediately, wrap them in greaseproof paper and then in foil or pop them into plastic containers.
